I’d like to introduce you to our new coffee we picked up yesterday.

Look how oily those beans are! This stuff made the best cup of coffee – one of my favorites. Nick made us each a cup of French Press to have with breakfast today and it was really good. Better than Kona? Probably not, but it’s close!

We picked up some bacon this week with the groceries, so we made bacon, eggs, and fruit salads for breakfasts. I love making breakfast on the weekends with Nick – we can be as fancy or lazy as we want and it feels like we have all the time in the world.

And I had grits with my eggs, as usual. I just like to have something under the eggs so I don’t miss any of the runny yolks!

We don’t really have plans for today, so I don’t know what we’ll end up doing.

BSI Try #2

As soon as Beadie announced that the BSI this week was kale, my brain started working overtime. I have been lovin’ kale lately, so I knew I wanted to come up with something creative and something I hadn’t tried before.

 

Somehow, I came up with Greens, Eggs, and Ham Pizza

Yum!  This turned out SO much better than I thought it would  :)  I thought the idea was good, but I honestly had no clue if it would be good or not – and neither did Nick when I told him our dinner plans on the way home from work tonight. But – thank goodness – we were both pleasantly surprised.

 

Greens, Eggs, and Ham Pizza (Serves 2 – you could make a normal size pizza to serve more or have leftovers)

  • 1/2 a TJ’s whole wheat pizza dough (the other half is in the fridge for tomorrow)
  • 1 8 oz can tomato paste
  • 1 cup water
  • Italian seasoning, garlic powder, oregano, crushed red pepper – all to taste
  • 3 leaves kale, torn into small pieces
  • 2 low fat string cheese sticks, grated (this was all I had :) )  It made about 1/4 – 1/2 cup cheese
  • 2 slices lean ham, diced
  • 2 eggs

 

  1. Put tomato paste, water and seasonings in pot over low heat. Let simmer to combine flavors.
  2. Wash kale, then add to tomato sauce. Let this cook 5-10 minutes.
  3. Once sauce is ready/kale is cooked a bit, spread this over your pizza crust.
  4. Add ham and cheese to pizza, then top with eggs. I only did 2 since this was just for us – you’ll want one egg per person, so place accordingly.
  5. Bake at 450 for 10-15 minutes until cheese is melted and egg whites are cooked.
  6. Eat!

I am seriously sad this is already gone. I just wanted to make sure we didn’t have leftovers since I don’t think the eggs would do too well reheating  :)

Elderberry's

For lunch, Nick and I decided to try Elderberry’s, this new place that opened up a few months ago. We hadn’t been there before, but I know I want to go back!

They have lots of different wraps (that you can also get as salads) and a TON of smoothie flavors. I didn’t try a smoothie today, but I did see that they have a Girl Scout Thin Mint flavor – that could be trouble.  :)

I got a wrap on their wheat tortilla with turkey, avocado, lettuce, tomato, sprouts, and a little bit of honey mustard.

I have never had honey mustard with avocado, but it’s so good!

I also tried some Pirate’s Booty, which I had never had before. This was one of those single serving bags – it was good…like healthier cheeto puffs.pirates

I’m just about to start eating this apple back in my office.

Green Tea for Me

Good Morning  –  it’s FrIdAy!!!

I’m SO glad it’s almost the weekend.

And what better way to start a Friday than with an awesome bowl of oats?

This was the same mix I had on Wednesday:

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1/3-1/2 cup pumpkin
  • cinnamon!!!
  • 1 Tbsp sliced almonds
  • 1 Tbsp walnuts
  • 1 tsp butterscotch chips, 1 tsp mini chocolate chips

Mmm…melty.

I also had a cup of skim milk, as usual.

So, I usually have 1-2 cups of coffee at work. Not today! I always bring some skim milk from home to put in my coffee, but I ran out yesterday and forgot to bring more. I’m not a fan of black coffee unless it’s amazing (and ours usually isn’t) but I don’t like those powdered creamers, either.

So I dug out some tea that I have in my office. I actually found TONS of tea in my office! I guess I need to drink it more.

This tea is really good, and I’m feeling fine not having coffee – maybe more tea is in my future?

I also just ate (at 10:20) a hard boiled egg I brought. I’m glad I thought to toss it in my bag this morning – I’ve been super hungry this week, and today is apparently no exception.

Well, back to work – Nick and I are going out for lunch, but we don’t know where yet. We’ll see what happens  :)
