Yoga Monday

Ah….why don’t I do yoga more often?

I really wanted to go for a run today, but it was 30 degrees when we got home and windy – no thanks. Instead, I got dinner started then went downstairs and did an hour of a full class yogajournal.com download. This one was free to try and the whole thing was about 1 hr and 20 minutes. I needed to check on dinner so I stopped right around an hour, but it was starting to wind down at that point, so it was a good place to stop.

I feel so good! I know I love yoga, but it’s hard for me to find the motivation to do it on my own at home. I really liked this podcast, so I’ll definitely have to try some more. My arms are so sore! Lots of downward facing dog, plank, and chatarunga (is that how you spell it?).

Dinner tonight started with this soup mix

soupmix

This is from the awesome Dayton market near Nick’s parents house – they sell tons of cool stuff and it’s so affordable! I always buy stuff when we go there, and this is one of my favorite soup mixes yet.

For this soup, I used:

  • 1/2 lb lean ground turkey
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1/2 onion, chopped
  • 1.5 cups soup mix
  • 4 cups water
  • 1 can crushed tomatoes
  • 1 cup chicken broth
  • salt, pepper

Pretty easy to make, too! I just cooked the veggies, added the turkey, and then added everything else and let it simmer while I was doing yoga.

I came upstairs, stirred it and ate!

With a slice of my homemade whole wheat bread  :)

More info about the baked goods experiment coming soon! I just have a few more pictures to take  :)

Heart Health series is starting tomorrow! Make sure to tune in!

Since I had 3 people interested in being interviewed, I’ll interview all of you! Emails coming soon.

Interview + Lunch

Well, I guess lunch + interview!

Lunch – not so appealing on the eyes, but very appealing on the taste.

Some leftover barley topped with the last serving of my kale/lentil soup (I froze the rest) and a veggie burger for a little more protein.

So, Mara from I Made Dinner randomly chose me as one of her people to interview next! I was waiting for someone to pick me – apparently, most of those random number-picking tools never like my number  :)

Here are the questions she sent me:

1.) What’s your favorite thing about blogging?

My favorite thing so far is meeting so many people! I love finding others that have the same passions and interests, and it’s so fun to get a glimpse into people’s lives through their food, recipes, and other randomness. I also have noticed one thing that I didn’t expect – I’ve become more creative with my meals because I plan on posting them. Yes, we still eat a lot of leftovers, but I try to find different ways to use some of them so I don’t have the same exact pictures for days on end  ☺

2) What’s your absolute favorite splurge meal?

Anything from The Bank. It’s this amazing restaurant here, and we definitely splurge whenever we go. We usually have to save up $ and plan on it, but everything we’ve tried is seriously amazing. I will definitely do a review on here of the restaurant, but I don’t know when we’ll go next! Everything is delicious and beautiful, and they serve the perfect portions – I can have a salad, meal, and dessert and not walk away stuffed to the gills.

3) Where’d you learn to love that which you blog about?

Hmm..this is a hard one to answer. I think food is such a strange topic to blog about, even though that’s what I do most of the time.

I love food. I eat it everyday, and since I have to eat, I think I should enjoy what I’m eating as much as possible. Learning more about healthy foods and eating came from following Core on WW (now called Simply Filling) – before starting that 4 years ago, I never knew what bulgur or wheatberries were, and now I love them! I’m also just super interested in health topics, food, and recipes and read a lot of that information on my own – you know, during free time – when I have some! A lot of my interest in health issues, food, etc., has really developed over the past 2 years while dealing with so many health issues in my family. That has motivated me to learn more and do more in regards to my overall health.

4) If you could have dinner with any person, living or dead, who would it be and why?

Ah…another hard question, Mara!

I’m sure my answer to this question could change every few months, but right now, I would love to have a meal with one of my best friends, Marques. He died, along with his mother, in a car accident almost 10 years ago. I would just like to talk to him, hug him, and see how he thinks I’m doing. He was an amazing person that always had high hopes for not just me, but for my entire family, who loved him dearly. Losing him is still one of the hardest things I’ve ever had to go through.

5) What’s one thing you’ve done that you NEVER thought you’d do?

Start a blog!  ☺ Especially a blog about food and recipes!

I honestly never cooked what I consider a “real meal” until I got married almost 5 years ago, so to have a blog about what we’re eating and posting pictures and recipes is still so surreal to me some days. To prove my point, I really do remember the first ever meal Nick and I cooked together – it was a mushroom pasta dish, actually. I should make it again! Before that (at home and in college), I ate a lot of microwave meals and the main things I “made” were grilled cheese sandwiches, mac’n’cheese from a box, etc.

So, you can see why having a food/healthy living blog is so strange yet exciting for me. I never really followed any blogs or even knew there such a thing as food blogs and healthy living blogs until last year! But I am loving it.

Thanks for picking me Mara!

Here’s the rules to play along:
1. Leave me a comment saying, “Interview me.”  If a few people want
interviews, I will randomly pick 2.
2. I will respond by emailing you five questions. (I get to pick the
questions).
3. You will update your blog with the answers to the questions.
4. You will include this explanation and an offer to interview others
in the same post.
5. When others comment asking to be interviewed, you will ask them
five questions.

Here’s to a crazy Monday  :) See you for dinner!

Hangry Pants is giving away some Zoe’s Granola! Check it out.

Cold Morning Meet Hot Oatmeal

It is SO cold here! The high is supposed to be in the 30s? Blech. I either want one big fun snow OR spring already!

I was really looking forward to a big bowl of warm oatmeal so that’s what I had.  This is the same mix I had a few times last week, but it will be the last time you see this bowl this week – I used the last of my pumpkin this morning!

A cup of milk

Pumpkin and Banana oats with 2 Tbsp walnuts, 1 tsp butterscotch chips and 1 tsp mini chocolate chips

This mix is so good

I’m off to get some coffee  –  work this week is going to be crazier than normal since my supervisor is on vacation and I’m taking over her tasks. I may not be able to do lunch time posts this week, but we’ll see!

Hope your Monday is going well!

What’s your weather like today?

Glimpse of Baking Project

How was your Sunday? Mine was pretty good – I wanted to go for a run today, but I don’t think the temperature here ever got above freezing! It was snowing off and on all day, but I doubt we’ll get enough to cancel work tomorrow  :(  I’m glad everything is done, but I’m not ready for Monday yet!

I got laundry done, clean sheets on the bed, dinner made, lunch prepped, house cleaned (thanks to Nick for that, too) and caught up on blogs. Whew!

Dinner tonight was a good, Sunday night meal.

Mini Meatloaves, Mashed Potatoes and Green Beans

meatloafdin

The meatloaf recipe is based on this double cheese meatloaf recipe, which was adapted from a Cooking Light recipe.

My changes:

– 1 lb. lean ground beef, 1/2 lb. lean ground turkey

– I don’t precook the onions before mixing them in

– I used one low fat string cheese in the mix and soy parm

– I added some balsamic (about 1.5 tsp) to the ketchup/mustard mix for the tops of the meatloaves

– I divided the mix into 6 mini loaves (about 4 oz. each) and baked at 350 for 45 minutes.

I promise to tell you exactly what I baked this weekend, but I’ll be doing a special experiment along with the post, so you’ll have to wait just a bit longer  :)

I hope you’re getting ready for the Heart Health Series! The first installment will be happening soon, and I’m super excited.

Enjoy the rest of your weekend and I’ll see you for breakfast!
