Not N’Sync

I had a funny dream last night – probably one of the strangest dreams I’ve had in a while.

In my dream, I was at an amusement park with a bunch of bloggers I met in San Francisco a few weeks ago and N’SYNC. Weird, right?

Apparently, I was also married to J.C., which is weird enough because when I was listening to N’SYNC back in the day, I was totally a Justin girl.

Anyway – even though we were married, J.C. and I couldn’t hang out at all in public because he always needed to look single or something, so I ended up walking around the park with Kelly from The Pink Apron and talking about shoes.

Of course, I wanted to find out what happened in the dream, so I ended up turning off my alarm clock and Nick never set his for today so I woke up late again.

Then Roxy decided to do an encore of last Monday morning…and it’s gray and gloomy and rainy. And I feel a headache starting.

It seems as though Monday is trying to sabotage me today, but I’m going to fight it!

First, with a good breakfast.

Pumpkin oats, actually.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon!
  • 1/4 cup pumpkin
  • 1 Tbsp crunchy pb
  • 1 Tbsp dark chocolate chips

If K starts almost every morning with Reese Oats, I figured I would try, too.

Even though it’s nasty and rainy and Monday…I’m going to have a good day!

Hollow Leg

I am still hungry! I don’t know what’s going on today, but nothing is filling me up. I’m about to make some popcorn to have as a snack tonight so my stomach will quit rumbling.

Isn’t it so weird to be so hungry some days?

While working on laundry this afternoon, I had my last mini strawberry Oikos yogurt with some trail mix.

Roxy started bugging me while I was eating this because she loves yogurt. She kept trying to grab the spoon and stick her face in the container before I was even finished!

Once I ate everything, she got to have the last bit around the inside of the container. I wanted to get a picture of her with her entire face in the yogurt cup, but I couldn’t get to my camera fast enough. It was so funny to watch.

She licked it clean – it looked like there had never been any yogurt in there at all.

Nick stopped working on the dresser a bit ago so we could eat dinner.

We made some more quesadillas with the leftover roasted sweet potatoes and beans. I put a little colby + pepperjack in mine tonight.

And I finally had some veggies today! Lettuce, corn, avocado and salsa on the side.

I love the roasted sweet potatoes in the quesadilla – it gives just enough sweetness to counteract the spicy seasonings + salsa.

I’ve got all the laundry done, folded, and put away and clean sheets on the bed! That’s my favorite part about Sunday nights – getting into bed with fresh sheets.

 

I’ve got to get something to eat. And of course I want ice cream and we don’t have any :\  Oh well, I’ll find something!

 

Sugar and Spice

Yesterday was so much fun! We watched football, had good food, and hung out with friends – one of the best ways to spend a Saturday  :)

We ended up not getting home until around 10 last night, but it was fun. And we won!

We had snack-type foods yesterday (meatballs, chicken wing dip, chips, veggies, freshly smoked salmon, pumpkin dip, cookies) and never really had a real lunch or dinner, so I was (and still am!) pretty hungry today.

Nick had to do sound at church this morning, so we left early and just planned on getting some breakfast and coffee at Panera.

I got their gingerbread bagel (yum) with some reduced fat cream cheese and a cup of coffee.

The bagel was awesome, but this did not fill me up at all! I’m so used to having bigger breakfasts, and a sweet bagel just will not hold me for very long. I wanted a breakfast sandwich, but I was so disappointed in the last one I got here that I just went with a bagel.

We were planning on coming home for lunch today, but then I heard someone at church talking about Thai food and lunch plans changed quickly  :)

I got the drunken noodles with tofu – soo spicy! I loved it and it made my lips burn. I ate about half of this and brought some of it home so Nick can have leftovers for lunch tomorrow. I’m not sure how they cook their tofu, but it had the best texture – not like anything I’ve had before.

And since I’m a bottomless pit today, I just had some pineapple, too.

Nick’s asleep on the couch, and I’m about to get started on laundry. There may be a nap for me, too.

It’s a gray and chilly day here, which means it’s a good day for getting in my sweatpants.

The Best Kind of Morning

I woke up this morning at 6:30 to a cat meowing and jumping on the bed, right in my face, begging for attention.

After getting up to let her outside, I put on my glasses and stood in the kitchen, barefoot, while planning out some new recipes to try today.

I love the quiet of the morning. It’s different than being up late at night, for some reason. Being up early just makes me feel at peace.  I don’t think there’s anything better, really.

I stood in the kitchen for a while in my pajamas and glasses and bed-head, with a cookbook for reference. And it was awesome.

Then I sat on the couch and read Donald Miller for a while – what a great way to start my weekend. If only every day could start this way…

And now it’s going to get busy!

Nick and I have had a lazy morning and it’s been fabulous so far.

We watched a little news once he got up, talked to both our families on the phone, and finally made breakfast.

Nick cooked up the last of our Applegate Farms chicken breakfast sausage (yum!) and scrambled some eggs.

I needed some orange zest for a recipe I tried this morning, so we sliced up the orange to have along with our meal.

Plus Trader Joe’s Kona coffee – only the best.

As for my recipe I already made, it involved some NuNaturals I won from Heather!

Specifically, their baking blend which is what I tried today. I also received some packets and their vanilla liquid, which I can’t wait to try in an iced coffee!

Unfortunately, I’m not giving this recipe out yet because I’m also going to enter it in the POM recipe contest!

Nick and I both had a slice this morning and it turned out great. The baking blend was perfect in this quick bread! I can’t wait to try it in other recipes, like Mama Pea’s Vegan Pumpkin Cinnamon Rolls  :)

I still have a lot to do today, but most of it should be fun.

  • Make meatballs (also a new recipe I came up with)
  • Make pumpkin dip?
  • Uh…shower  ;)
  • Football watching with friends!

I better get going!
