Happy fake Friday to me! I’m so happy today is my last day this week…I’m ready for days full of laughter, food, and family.
I had to put together some random stuff for lunch today – I did not pack anything last night and didn’t have much to choose from this morning, so I just grabbed what I could and hoped it would taste good!

Broccoli
Leftover roasted acorn squash + eggplant
Leftover roasted sweet potato
Spicy hummus
Plus an apple!
Not the best planned lunch ever, but I didn’t want to waste any of this food.

Who doesn’t need a cup to carry yogurt in? I know I do. I would much rather buy the bigger tubs of yogurt so I don’t waste so much material, but some containers just don’t work well for yogurt.

I didn’t have any fun dreams last night :(
Of course, I get up on time on my last day of work this week ;) At least it happened and I wasn’t rushing this morning – I didn’t pack my lunch last night, so that gave me enough time to find something to take to work.
I also made a bowl of oatmeal that I haven’t had in a while.
Pineapple Upside Down Oats
Any other time I made this, I used canned pineapple and it was good. But fresh pineapple in this was amazing!
1/2 cup oatmeal, 1 cup water, pinch salt
1/2 cup diced pineapple
cinnamon!
2 Tbsp walnuts
1 Tbsp unsweetened coconut
1 tsp brown sugar
I normally don’t add any sweeteners to my oatmeal, but the brown sugar in this bowl is so good. When you sprinkle it on top of the hot oatmeal, it melts into this brown sugary syrup (you can see it on the pineapple, too!).
I also bought new cinnamon this weekend.
I normally just buy the store brand of cinnamon, which is between .50 and $1. But I tried this Saigon Cinnamon at a friend’s house a few weekends ago, and it was the best cinnamon I’d ever tasted.
I can’t really explain what the difference is…this one smells like cinnamon, but it also smells a little sweet + hot almost?
This cinnamon is definitely more expensive than the store brand, but it’s so, so good. I think it’s worth it.
I had a slice of my pomegranate bread for a snack today. Work was really busy this afternoon and I was going to have another slice, but I got so tied in up things that I never got up again to get it!
As soon as I turned off my computer, I got working on dinner.
I had some leftover meatballs from this weekend and some veggies that needed to be used.
I cubed up an acorn squash and 1/2 an eggplant I had in the fridge, and roasted them with some olive oil, salt, garlic, and oregano at 450 for about 45 minutes.
While the squash and eggplant were roasting, I cooked some whole wheat pasta and heated up the leftover meatballs.
Once the pasta was cooked, I mixed it with the roasted veggies, meatballs, and a can of diced tomatoes and topped it with a little mozzarella. Baked at 350 for 15 minutes and it was ready!
I love the roasted eggplant with the squash! I’ve tried roasting eggplant before, and I’m not sure if it wasn’t at the right temperature before, but it turned out great this time.
I needed something sweet to end dinner with, so I just broke into these caramels from the Foodbuzz Festival.
I enjoyed hearing who you liked better between N’SYNC and BSB, although I was reminded of Hanson!
Oh, my little sister and I were so obsessed with them! I remember we had an entire binder just filled with pictures we had torn out of magazines and a concert video tape that we used to watch, over and over.
The funny thing is…I don’t listen to their normal cds anymore, but their Christmas cd they put out is one of my family’s favorites! My little sister got a new copy of it for my mom just a few years ago.
I’ve been busy this morning! Work is making the day tick by and I was more than ready for lunch.
I made another pear + brie + blue cheese dijon mustard sandwich today.
I wish I always had these ingredients – the mix of the brie and that tangy dijon and sweet pear is so good between the crispy bread!
Today is so dreary! It’s been raining most of the morning and is just dull and gray outside.
I tried to help the gray mood by trying some new tea –
I really liked it, but I have no idea what flavor it is. It doesn’t say on the bags, and I won it in a blog giveaway. It’s kind of sweet + licoricy, and I loved it!
