Sugar Date

I don’t know about you, but my “holiday weekend” started at 5 pm today!!! Woohoo!!!

Today was my last day of work this week, and I couldn’t be more excited.

AND I’m just excited to be doing all kinds of holiday stuff tonight and tomorrow  :)

I was pretty busy working this afternoon and somehow got through the afternoon without a snack – I’m not sure how that happened, but that leaves more room for dessert tonight.

Dinner was quick + easy since we still have so much to do tonight.

We heated up the last of the picadillo from the other night and I steamed some broccoli for a quick meal.

Plus, eating this tonight meant we wouldn’t waste these leftovers.

We also had some of this brew with dinner – it’s good and from North Carolina!

Going Nutty

This day is dragging by just like yesterday!

I’m busy with work, and my mind is just racing with all the things left that Nick and I need to do tonight and tomorrow.

I’m ready for today to be over because I have a to-do list that is super long, and I need to get working on it!

Lunch today had to be quick, because I also have to run up to the store during lunch to pick up something I need for our gifts.

I knew I wanted a big salad, and I somehow ended up using pecans + almonds in my lunch today!

The salad is:

  • romaine
  • carrots
  • broccoli
  • cranberries
  • pecans
  • dressing with: 2 tsp olive oil, 1 tsp blackberry/pear balsamic, 1 tsp dijon

and I really wanted some yogurt with lunch today.

Thank goodness for these little containers! They’re the perfect size to have with lunch.

I topped this plain Oikos with some Frog Hollow Farm apricot conserve + salty roasted almonds.

I’ve got to get up to the store and get back to work – wish me luck!

Triple Threat

Today is going to be busy!

I’m working from home today, but Nick and I also need to work on more Christmas gifts – I have a feeling things will be nonstop for most of the day.

And for some reason, I didn’t even turn my alarm on last night…so I woke up once Nick’s alarm went off this morning.

The only things I need to fully wake up are this bowl of oatbran + coffee, which is made and just waiting on me!

I decided to use 3 kinds of chocolate chips on my oats today, along with a spoonful of peanut butter. It’s like the best Reese’s ever – a triple threat!

  • 1/3 cup oatbran, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon
  • 1 Tbsp crunchy peanut butter
  • 1 tsp each: white chocolate chips, semisweet chips, dark chocolate chips

I’m not usually a big fan of white chocolate, but it’s good when mixed with semi-sweet + dark!

Kitchen Party

Did today seem super long to anyone else? I felt like today was as long as 2 days put together…I feel like it should be much later in the week than Monday, but I guess I do have a few days off this week, so it’s worth it :)

Nick and I went out to lunch with a few friends/coworkers – I got some chili and a salad. The best thing is this place has pretzel rolls – they’re so good! I had one with my lunch.

This afternoon was pretty busy at work, and I ran into a few issues which was kind of frustrating. But, it is what it is. And everything will get done – it just didn’t happen when I needed it to today.

While working through my emails and finishing up some things, I tried a new bar!

I loved this bar! There were huge chunks of macadamia + brazil nuts, and this bar wasn’t too sweet. Too bad I can’t buy them here  :\ I liked it! I can’t wait to try the other flavors.

All in all, work was okay today.

Oh well – at least dinner was good!

I made French Onion soup!

For the soup, I just cooked 2 large onion (sliced thin) in a 1 Tbsp of olive oil and 1 tsp butter. Once the onions were softened and golden (about 15 minutes), I added in 4 cups of beef broth, 2 cups of water, and a pinch of salt + pepper.

While the soup was simmering, I sliced up some whole grain bread and topped each slice with some fresh parmesan and a little provolone and put them in the oven to melt/brown.

Then we just topped our soup with the bread – easy! I wanted to broil the bread + cheese on the soup, but I didn’t have any dishes to do that.

This was the perfect dinner for tonight – it was so cold today!

After eating, we got started on our projects.

Tonight begins our Christmas prep! We’ve got all the presents bought, but we still have all the things we’re making for our family.

For the last hour, Nick and I have been working on things for gifts – we got one item done, and I got another one started that has to sit overnight.

I’m excited to see how everything turns out!

 

We just got all the stuff put away, and I’m ready for pajamas and cuddling with Nick + Roxy.
