Italian Meatball and Kale Soup

by admin on February 16, 2011

After making those brownie batter bites, I feel a little strange posting this healthy soup recipe.

This is the complete opposite of those triple chocolate treats, but this soup is just as good…in its own way.

And that’s what it’s all about, right? Balancing chocolate with kale and whole wheat couscous. Or that’s what my life is, anyways.

I dreamt of making big bowls of Italian Wedding Soup and then, in the middle of cooking, realized that I really don’t know what Italian Wedding soup is. I was just sure that this wasn’t it.

Do you ever do that? Think you know what a certain dish is and then realize that you really have no idea?

This isn’t the first time it’s happened to me.

Maybe it’s not what I planned, but this soup turned out tasty.

And while we’re finally getting some warmer winter weather, I’ll never turn down a good bowl of soup – no matter what the temperature is outside.

Italian Meatball and Kale Soup

Meatballs

  • 1 lb. lean ground beef
  • 1 egg
  • 1 Tbsp Italian seasoning
  • 1 Tbsp garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Soup

  • 1 onion, diced
  • 2 carrots, diced
  • 4 stalks celery, diced
  • 4 cups broth
  • 1 cup whole wheat couscous
  • 1 bunch (about 4-5 cups kale), chopped into bite size pieces
  • 1 tsp salt
  • 1/2 tsp pepper
  • parmesan, for topping
  1. Heat large pot over medium heat.
  2. Add carrots, onion, and celery and let cook 5-10 minutes, until softened.
  3. While veggies are cooking, mix together the meatball mixture and shape into quarter-sized meatballs.
  4. Add broth to veggie mixture and bring to a boil.
  5. Lower broth to a simmer and add couscous.
  6. While couscous is cooking, heat skillet over medium heat and cook meatballs in batches, browning on all sides until cooked.
  7. As each batch of meatballs is browned, add them to the broth mixture until all the meatballs are in the soup.
  8. Stir in kale and let soup simmer 5-10 minutes to let the kale soften and the meatballs to cook through.
  9. Serve, topped with parmesan cheese.

As soon as I was finished making the pumpkin chocolate chip muffins with the Tropical Traditions coconut oil, I knew I needed to make something savory with it – and soon. Thankfully, the season for soup is here! While we’re having some unreasonably warm weather this week, last week had a few evenings that were [...]

Today has been good so far! I’m moving along with work stuff, the weather is beautiful here (finally!), my food has been good, and I’m wearing one of my favorite dresses. The only thing that could be better is if I was at the beach with my sisters  this afternoon instead of at work    [...]

Do you ever have those days that are just blah? I think I’m having one. My oatmeal was awesome, my work day has been pretty busy, but I just feel nothing. Like nothing matters either way. Just “eh”. Maybe because I ate lunch and am not really satisfied? I packed an awesome lunch of sliced [...]

I can’t believe it’s already Monday – I feel like this weekend flew by and I missed most of it! I’m still really sore and tight, but it seems a bit better than it was yesterday. I was able to go see my chiropractor this morning and she took some x-rays of my neck/shoulders. The [...]

My office is having a “Lite-Hearted Rememberance Lunch” for our coworker that passed away a few months ago of a heart attack. I’m so happy that they are doing this in honor of him, and I think it’s a great idea to have our celebration focused on heart health – I think he would have [...]
