Leftover Remix

I’ll go ahead and say this: We eat a lot of leftovers. It’s just two of us, and I actually love having leftovers if the meal is good – it makes for quick dinners on busy nights, but I do try to have at least 4-5 different meals per week, not including if we go out to eat.

 

Just a warning in case you see a lot of similar pictures in the future  :)

 

No lunch today!  Breakfast was pretty late (around 10:30 or 11 by the time we ate), so neither one of us was really hungry for lunch.

 

We did go see the movie Defiance, which was amazing. I really hadn’t heard anything about this movie at all, but it was one of the best movies I have ever seen! It’s based on a true story from WWII – I won’t ruin the story, but if you have the chance to see it, I would definitely recommend it.

 

Dinner was leftovers in a little different format than last night.

After seeing Meghann and Caitlin‘s wraps this week, I knew I needed to put one together for dinner.

 

My wrap had:

  • La Tortilla whole wheat tortilla
  • smear of fat free refried beans
  • Chipotle shrimp from last night
  • romaine

 

Instead of having everything on a salad, I just added a salad of more beans, romaine, tomato, and avocado to the side for more veggies. You know it’s a good dinner when it’s good the second time  :)

 

We’re just hanging out on the couch right now, trying to keep warm on this cold night. I may have some popcorn drizzled with olive oil in a bit…you never know.

Nothing a Big Breakfast Can't Fix

Man…what an interesting night last night.

 

Our friend, Gareth, stayed the night with us last night. We all stayed up till around 11:30 or so before heading to bed. Around 5 am, Nick woke up and told me that we lost power! Not so fun since it got down into single digits last night – we were up at 5:30 trying to get our gas heater lit. We couldn’t get it on, so we went back to bed for about an hour and then Nick tried again. Thankfully, he got it lit and it started to heat up our den pretty well. The power came back on around 8 am – I’m happy about that, because it’s only supposed to be 20 degrees all day today!

 

Since our breakfast plans for home were derailed, we went to a little diner in downtown Blacksburg this morning. They have awesome greasy diner food; something you need every now and then. I don’t have any pictures though – I brought my camera with me, but we were so wrapped up in our conversation that I completely forgot to take it out of my purse!  I know I’ll get better about it once I get used to having my camera with me.

 

I had the Joe’s Breakfast special, which was 2 over easy eggs with plain grits, a few pieces of bacon, and one of their awesome biscuits. I’m about to have a piece of fruit, check up on blogs, then start on the rest of my laundry.

Busy Day, Quick Dinner

Today was busy! I got most of the stuff done that I needed to and everything else can wait!

 

Lunch was out with Nick, but  I forgot to take my camera! I had a Salsa Gardenburger on  Honey Wheat bread with lettuce, tomato, and red onion. I also had water and one of the best chocolate chip cookies ever.

 

After lunch, I did grocery shopping and then met him at the gym to go running before we went home. Once we got back, I whipped up this quick dinner:

I love making taco salads! They’re filling, easy to make, and I can get in a few  veggie servings, too!

 

This one had:

  • fat free refried beans
  • chipotle shrimp
  • romaine
  • tomato
  • avocado
  • La Tortilla Factory whole wheat tortilla cut into wedges and toasted for “chips”

 

Short, sweet, and to the point!  I’m off to watch What Not to Wear. Have a great rest of your Friday!!!

From my head down to my legs…

Morning!

 

Does anyone remember that song from the old egg commercials? “I love eggs, from my head down to my legs”. I have it stuck in my head after making eggs again for breakfast. At least it’s true! I. love. eggs.

 

Today I’m home from work – working for the state, we get a few days of the year that are the “smaller” holidays and we can choose if we want to go in and bank those hours for later or just take the day off without having to use any leave. So…I took today off. We’re pretty sure a friend is coming through town for a conference and staying with us tonight, so I figured I should get a few things done. My plan for the day is:

  • Try the Morning Flow 20 minute yogadownload.com class
  • Clean house
  • Shower
  • Laundry
  • Lunch
  • Groceries
  • Go to the gym to workout with Nick
  • Home for dinner
  • Watch What Not to Wear   :)

 

Breakfast today was nice; we thought we really slept in but we got up at 7:30! I guess that’s later than a normal workday, but it felt so much later! Since we had a bit more time this morning, I made omelettes! I made them with 2 eggs, some diced up ham, and cheese.

 

I also had a slice of Arnold 100% whole wheat bread, toasted, with about 1/2 Tbsp of almond butter.

 

Add on to that a cup of coffee with some skim milk and a banana, and you’ve got a great breakfast.
