Case of the Mondays

Today has not been my day.

I should have known when I turned my alarm OFF instead of hitting snooze  :)

 

 

Breakfast was good, at least!

This bowl was:

  • 1/2 cup dry oats
  • 1 cup water
  • pinch salt
  • heaping tsp. of cinnamon
  • 2 Tbsp total of walnuts/almonds
  • 1 cup pineapple chunks
  • 1 Tbsp unsweetened coconut

 

This was a really good mix (again), but I forgot the little bit of brown sugar I used on this mix last week!  It was still good without it, though.

 

 

Work was just insane today – I am  so glad today is over.  Do you ever have those days when you just wish you could walk out and not come back?  That’s about how my morning went today. I guess everyone has these days every now and then, but it doesn’t make them any easier.

 

Lunch was pretty good, but probably not exciting picture-wise  :)

 

I had some bulgur topped with frozen->thawed meatballs and sauce from last week. Still good after being frozen!

I packed clementines, but work was so busy and weird that my appetite wasn’t what it normally is.

 

 

Dinner used up some leftovers in a different way. It was good and just what I needed.

 

Cumin Chicken Taco Salad

  • 1/2 cup fat free refried beans
  • 1/4 cup brown rice/salsa mixture
  • 1 piece of the cumin/oregano chicken from the other night, diced
  • 1 roma tomato, chopped
  • 1.5 cups romaine
  • diced avocado
  • drizzle of 2 tsp. olive oil and some lime juice

 

 

This is one of my favorite ways to get in a LOT of veggies  :)

 

I also heated up some of my BSI entry, the Barley Date Pudding. It hit the spot. Creamy and comforting.

I’m off to have a glass of milk – I can tell I haven’t had enough calories today since I’m kinda hungry again.

 

I don’t like when work gets in the way of my eating  :)

I’m having a crazy, kind of bad day at work, and I just don’t have time to blog breakfast and lunch right now.

The Chocolate Spike #2, Plus Some Favorites

I’m so glad I’m doing another Chocolate Spike review – mainly because that means I was able to try another one of their chocolates!  :)

Last week, I mentioned a snack I had but couldn’t post yet – well, here it is!

The Chocolate Spike currently has special Valentine’s Day flavors, and I had the pleasure of trying their Fire and Ice Truffle!

This dark chocolate truffle had cinnamon and peppermint flavors together (hence the fire and ice). I wasn’t sure how I would like the two together, but it was so good! The peppermint wasn’t too strong, so it just created this almost cooling effect that was perfect with the warmth of the cinnamon and the deep, smooth, dark chocolate.

I love the little V-Day sprinkles, too   :)

I would definitely get this one again – although, I would get anything from The Chocolate Spike!

Since I’m also participating in Lee’s First Annual Valentine’s Day Blogger Exchange, I thought I would list a few of my favorite things since my blog hasn’t been up and running for very long. She suggested doing this, and I think it might be helpful!

Long Day, SUPERbowl o' Dinner

I tried so hard to post my breakfast this morning, but time just got away from me!

 

 

Breakfast was yummy!

 

2 eggs over grits. I may like eggs a bit too much  :)

and some coffee  :)  Perfect again!  French press Kona coffee just can’t be beat.

Lunch today was at church – we had a potluck right after church was over and I didn’t take my camera! 

 

Just for the record, I had:

  • 1/2 plate full of salad – I’m glad I brought salad!  No one else did!!!
  • piece of chicken baked with salsa
  • black beans and a little couscous
  • 1 slice pizza
  • 2 homemade cookies

 

 

After the potluck, Nick and I ran over to Dick’s Sporting Goods to get some more running shirts. They had a bunch of stuff on sale and he got some really nice Nike DryFit tees for like $11! 

 

 

Of course, since he wanted to try his new shirt AND because it was beautiful here today, we went for a run this afternoon. The weather was perfect – it was 60 just about all afternoon and  the sky was blue and clear. It made me wish spring was here already!  And until the last 1-2 minutes of our run, it was a really good run for me. I was keeping a pretty good pace and feeling good and just enjoying the weather and the run. I didn’t really get any cramps (yay!) for most of the run – that is, until the last two minutes. All of a sudden this cramp moved from my upper ribcage down into my abdomen and just about killed me for the last minute. I finished though! We ran for just over 32 minutes, so only having a bad cramp for 1-2 minutes is okay by me – and at least it was right at the end!

 

 

Once back home, we took showers and cleaned up the house a little before I started on dinner.

 

What better to have during SuperBowl than a SUPER BOWL of chili mac?

This made a HUGE amount of food, but that’s good since we’ll be eating it for lunches this week.

 

Super Bowl Chili Mac:

  • 1 onion, chopped
  • 1 lb. ground turkey
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 3 cups water (or broth)
  • 1 can dark red kidney beans, drained and rinsed
  • 1 can light red kidney beans, drained and rinsed
  • 2 cups (dry) whole wheat macaroni noodles
  • salt
  • pepper
  • chili powder
  • cumin
  • garlic powder (I was too lazy to chop garlic tonight)  :)
  • Cowboy BBQ seasoning blend by The Spice Hunter

 

  1. Cook onion in a little olive oil in a large pot.
  2. Add ground turkey and cook through.
  3. Add tomato sauce, diced tomatoes, water/broth.
  4. Bring to a boil.
  5. Add in dry noodles, lower heat and cook until noodles are done.
  6. Stir in beans and seasonings.
  7. Top with anything! We used some of the leftover avocado topping from dinner last night, but this would be good with cheese, tomato, diced avocado, red onion, scallions, etc.
