Monday Musings

Last night, Nick and I both decided that we needed another day off…I think all weekends should be 3 days instead of 2.

I mean, we need one day to do fun stuff, one day to get things done (laundry, cleaning, etc) and then one day to actually relax, right?

Even though we both agreed, it didn’t change the fact that it is still Monday morning and work starts in 25 minutes.

The only things that make most Mondays bearable for me?

  • coffee
  • our local morning radio show
  • How I Met Your Mother

I actually did not want oatmeal this morning – I was so hot in the house a few minutes ago and couldn’t even think of having a hot breakfast, but I didn’t have anything to eat for a cold meal!

So, I just waited a few minutes and made it anyways. Now I’m glad I did  :)

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 1.5 Tbsp crunchy pb
  • cinnamon!

Basic bowl of oats, but so good. It’s nice to have a simple breakfast every now and then.

Off to eat, dry my hair, and get to work!

Sunday Supper

Whew! Sundays just get away from me…or, really, they just keep me from blogging  :)

And I love it!

First things first:

Nick and I tried this ice cream last night, and it. is. awesome.

The bites with the coconut-caramel? I’ve never had any ice cream like it! It was so good, and tasted just like a slice of german chocolate cake.

Even Roxy was begging for some.

We kind of watched/kind of slept through the 2nd half of the GA Tech/Clemson game, woke up just in time to see the end and went to bed.

We had to go to church early this morning because Nick was doing sound, so breakfast was fast + easy.

We each heated up some cinnamon rolls and had a tangerine on the side.

The cinnamon roll recipe I used is from MyRecipes, but I used all whole wheat flour instead of the mix they call for – everything else is the same!

Taking our coffee on the road, we headed to church this morning in the most beautiful weather.

No snow today, but the sky was blue and the sun bright. This one section we drove through looked like Narnia…all the bare tree branches covered in snow, glittering in the bright morning sun. I could have walked around for hours! Everything was just spotless and bright and beautiful.

Lunch was spontaneous today – we were planning on coming home, but ended up at our local place, the New River Grille, today. And since we were originally coming home, I didn’t have my camera with me. But it wasn’t anything new: blackened chicken, side salad, and some green beans. And about half of Nick’s fries :)

After we got home, we got started on some stuff around the house – everything needed to be cleaned, dusted, etc, and I had laundry to work on. Nick vacuumed the house for me while I baked muffins, dusted, cleaned the bathroom, and did laundry.

And we got everything done!

I’m happy I picked this dinner to make today because it was easy and quick to make.

I made Ribollita, an Italian soup that is served over bread.

I read a bunch of recipes for it, and kind of followed most of them but made just a few small changes.

  • 1 diced chicken sausage instead of bacon or pancetta
  • 2 cans of white beans
  • 2-3 cups of fresh spinach
  • vegetable broth
  • crushed red pepper sprinkled in

I had some whole grain baguette that we sliced, spread with a little Kerrygold butter, and served in the soup. The one slice at the bottom of the bowl absorbed the broth and it was the best piece!

The muffins I made earlier left me with some extra batter that wouldn’t fit in the muffin tin, so I made Nick and I each a little tiny cake in these ramekins.

I’m trying to figure out if I can post the recipe for these or not – I got it out of one of those Coffeehouse Mystery books that I love by Cleo Coyle. If I can post it, I’ll post it soon!

Guessing Game

If you had guessed…

…that I was up working on my cinnamon rolls at 6:45 this morning you would be right.

…that I waited to eat breakfast until I got the ladies brunch this morning (late, I might add), you would be right.

All the food was so good!

4 different kinds of egg bakes, 2 types of cinnamon rolls, chocolate covered strawberries, tangerines…coffee, tea, oj, cider…

Yum. I had some coffee with way too much fun conversation, lots of laughs, and just some good girl time today.

It’s nice to have that sometimes – just a room full of ladies, catching up on everything and having fun.

I also had a piece of this french toast bake – oh man. This stuff was amazing! I’m going to have to get this recipe.

I thought it would be super sweet, but it wasn’t! Even with the cream cheese topping and maple syrup, it was just the slightest bit sweet and way too easy to eat ;)

I’m kind of surprised I only had one piece!

I had a great time this morning, and I think we’re going to do this more often. I hope so!

After leaving the brunch, I ran a few errands…and…

I was so excited!!! And it snowed almost all day today. Everything was so beautiful. It was actually snowing at 6:30 this morning when I got up and didn’t stop falling until around 3 this afternoon.

Some of it’s already gone, but it was so much fun! I love how snow just makes everyone feel like a kid again.

By the time I got home from running errands, I was ready for dinner.

Brunch was later than my normal breakfast and I was out and about around lunch time (and not hungry anyways), so dinner was my lunch + dinner together.

 

And if you guessed

…that we had leftover pizza for dinner, you’d be right again.

We split the leftover pizza for dinner and I had a huge salad on the side for some veggies today and some Abita Amber.

My stomach is a bit happier now, but I already know I’m having some sort of snack tonight. Not having lunch just made me hungrier once I finally ate dinner! I hate when that happens.

Chinese a No-No

Ugh, I hate my stomach sometimes!

It just decides to be weird and not fun, and I don’t know why.

And yes, I am pouting…on the couch…in my pajamas…on a Friday night.

It’s also freezing cold here and it’s supposed to snow tonight/tomorrow. There – I think I got all my complaining out right now  :)

This afternoon was pretty good at work – busy, but good.

Depending on the weather tomorrow morning, I’m supposed to be going to a ladies brunch for church, so Nick and I did the grocery shopping after work today so I wouldn’t have to do it tomorrow.

Since we were out anyways, we decided to go that new Chinese buffet place again.

Good idea in theory…but my stomach is not happy with me now.

I had a few tiny steamed Shu Mai, a couple dumplings and lots of green beans.

Then more green beans, some broccoli/carrots, and some super spicy pepper chicken. Oh, and green tea + water.

Everything tasted good, but as soon as we left here and started walking through the grocery store, my stomach started doing its weird gurgling stuff and now I just feel blah.

At least the groceries are done, though! I’m happy about that, and I have everything I need to make my stuff for the brunch tomorrow.

It’s going to be an early morning with some fun baking  :)
