Mexican Take-In

2 posts already on Sunday? What is going on? ;) Usually, it’s all I can do to get one post up at night after dinner.

The sun was out a minute ago, but it looks like it went back into hiding for now. At least the rain has stopped!

My original plan for lunch today was to have leftovers from what would have been our dinner last night. But since we went to that potluck last night, I didn’t make a dinner for us, so there were no leftovers!

While I didn’t have anything quick to heat up, I did have the stuff to make an easy meal.

I know my dad will love seeing this meal :)  He loves huevos rancheros! And so do we.

I had a salad with romaine, scallions, black beans, corn, and a little ranch dressing alongside my tortillas.

For the huevos, I just took 4 corn tortillas (2 for each of us) and put them on a baking sheet. I heated the oven to 400 degrees and mixed some fat free refried beans with some garlic, dried cilantro, and cumin.

Dollop a little of the bean mixture on each tortilla and top with a little cheese. Put the baking sheet in the oven for 5-10 minutes or until the cheese is melted.

Once those were almost ready, I cooked some eggs on the stove top with some salt, pepper, and ancho chile powder, and then just topped the tortillas once they came out of the oven.

I also had some TJ’s green salsa, red salsa, and a little scallion on mine.

Roxy is already staring me down for dinner and that’s not happening. I’ve got some laundry to work on and some One Tree Hill to watch  :)

I have a fun dinner planned to use up some leftovers – can’t wait!

Pouring Pancakes

Blech.

Today is cold, gray, and rainy.

We were supposed to have some freezing rain last night, and there were a few patches of ice on the deck this morning, but it’s mostly just rain now.

Still, a day in the high 30s with rain? Not the best fall or winter weather.

Guess that means there will be a lot of cleaning, laundry, napping, and baking today  :)

Getting up to the sound of pouring rain outside just made me want pancakes.

I found a whole wheat pancake recipe in my Ellie Kreiger cookbook and made some changes for what I had.

FYI – Oikos plain is awesome in pancake batter!

I mixed up the batter while Nick cooked some bacon and then our pancakes in our cast iron skillet. I don’t know what it is, but using the cast iron gives the pancakes this amazing crust on the outside. They get perfectly golden brown and almost taste toasty.

I had 2 pancakes with some maple syrup, 1 slice of bacon and a tangerine.

Off to church!

I think lunch should be good, but I’m kind of making it up in my head and my plans keep changing :\ We’ll see how it turns out!

New Nuggets

Most of my list is done for today!

  • Christmas gift errand

I got all the groceries bought and put away, found a few Christmas gifts I needed (with coupons!), and completed my fun blogger errand today  :)

After singing along to a lot of Christmas music in the car…I got home around 1:45, and Nick and I were both ready for lunch.

I had a coupon for an Applegate Farms product, so I bought these chicken nuggets for us to try for lunch today.

They were great! They only took about 10 minutes to crisp up and they just tasted like really good chicken nuggets.

Nick mixed up some honey mustard for us, and we each had a salad and some bbq popchips!

Yup, I finally found Popchips, too. I had some coupons to get a free bag of them, but couldn’t find them anywhere. Finally, I found a few flavors at Target last week. The bbq ones are so tasty – kind of a sweet and spicy bbq flavor.IMG_0513

I’ve got to go switch some laundry and get my hummus/veggie platter ready for our potluck tonight! It should be fun.

I’m just happy it’s kind of chilly because I’m wearing my gray boots again today – they make me happy.

Frenched Flax

Happy Saturday!

I love not having to set an alarm clock  :)

Besides bacon, we are running low on just about everything this morning, so I had to get creative with my part of breakfast.

We only had 1 egg left, so I made Nick’s french toast with the egg and some milk.

Once his was done cooking, I coated my 2 slices of ww bread in a mixture of ground flax, water, and milk.

It definitely wasn’t the same texture of regular french toast, but it tasted great!

While the french toast was cooking, I took some leftover diced apple, pecans, and cranberries from our salads last night, tossed with some cinnamon, and heated up for 1 minute in the microwave.

A drizzle of maple syrup completed this dish – I love the tart cranberries the most! I wish I had used more, but we ran out last night.

Nick also made coffee  :) Freshly ground Kona. The perfect thing to have on a frosty Saturday morning.

I’ve got to go start the car + defrost the windows so I can head out – I’ve got a bunch of stuff to do today:

  • Call my parents for our regular Saturday morning phone call
  • Get groceries
  • Run some Christmas related errands (hopefully!)
  • Do a fun blogger related errand  :)
  • Come back and get ready for a potluck tonight
