Good, Bad, Yoga

Let’s start with the bad.

I’m pretty sure my work computer is shot. Our awesome IT guy was working on my computer all day and has some of my data moved/saved, but will probably be working on it tomorrow, too.

The good?

There’s an extra computer at work that I’ll be working on until we figure out what can be done with mine. I can at least get stuff done, thank goodness! It’ll just take a little adjusting in the processes since I won’t have all my files yet, but it’s okay.

The other good?

I did yoga today! 45 minutes, thanks to Brooke Boon.

Although most of my day was topsy turvy…frustrating…slow…and not what I expected, I put that all on the mat, stretched and breathed into it, and then let it all go.

I mean, it’s only Monday! I can’t let an out-of-the-ordinary day mess up my night or my day tomorrow.

I had some veggies + hummus + kashi crackers this afternoon while working + finding out the updates on my computer and then got out my yoga mat as soon as 5 pm showed up and I got my computer at home turned off.

— insert 45 minutes of calm here —

Another good?

Dinner was easy  :)

We heated up some of the shepherd’s pie and I steamed some broccoli to have with it.

And I only had half a roll because I burned 2 of them! I let Nick have the full one, and I just took the unburned bottom half of one.

Computer Crashes, Christmas Colors

Well, thanks technology.

My work computer is apparently in bad shape. I started out working fine this morning, but then it disconnected and once I got hooked back up, it just wasn’t working right.

Our IT guy is working on saving my data and is going to have to transfer everything to a different computer.

Thankfully, my supervisor just sent me a few things I can do on my laptop on my own so I don’t have to go in this afternoon – I just hope everything can be saved!

While waiting for an email from my boss, I made a quick lunch since I didn’t know if I would have to drive in for the rest of the day.

After having those huevos rancheros for lunch yesterday, that’s all I could think about!

and today, they were decorated for Christmas with both red + green salsa.

Instead of using tortillas today, I cooked some oatbran while I worked on my eggs and then layered everything in a big bowl:

  • oatbran
  • refried beans
  • corn + black beans
  • eggs cooked with olive oil, salt, pepper, ancho chile powder
  • TJ’s green salsa (the last of it!)
  • red salsa

I’ve got to eat and get back to work – wish me luck!

And no, my work computer is NOT a PC – it’s a Mac. So yes, Macs crash, too. :)

New Day, New Jam

Good Monday morning!

I was not up on time, but that’s okay :) It’s still going to be a good day.

My hair is half-dried, my glasses are on, and I’m ready to start my Monday.

Especially since I used a new product in my oatmeal this morning!

This Apricot Conserve from Frog Hollow Farm is too good to be true. It’s whole pieces of apricot in there, and they smell amazing. I got this jar at the Foodbuzz Festival and decided I needed to open it already.

I had a few bananas that were just right this morning and decided on an oatmeal banana split with these 3 as my toppings:

It’s like a big smile in a bowl! I should have put the pb on the other end for its “eyes”.

My oatmeal was just oats, water, salt and cinnamon today since the banana was the base.

Barefoot Blondies

Today has been the best day!

I’ve got almost all the laundry done – just one more load to fold and bring up – and I did the laundry while watching 2 episodes of One Tree Hill  :) 

Sadly, the sun never came back out this afternoon. It just stayed gray and overcast, but that is good cooking weather. It makes me want comfort meals, and lucky for us, that’s what was on the menu for tonight.

I had some roast leftover from a few nights ago, along with the veggies that cooked with it, so I cut up all the leftover roast into tiny bite sized pieces and added in some Worchestershire, tomato paste, and frozen peas.

While prepping that, I made some mashed potatoes with 2 huge potatoes, salt, pepper, some milk, 1 Tbsp of butter, and 2 laughing cow wedges.

I layered the meat and veggies into a baking dish and topped it with the potatoes.

Since I heated up the meat/veggie mixture and the potatoes were already hot, I just put it in a 400 degree oven for about 20 minutes until the edges were bubbling and the potatoes were starting to brown.

Shepherd’s Pie with leftover roast is awesome! Definitely better than other recipes I’ve made where you cook the meat right before layering it in the dish.

We had wheat yeast rolls + salad to round out dinner.

I love casseroles like this, but they never look pretty once you scoop it out of the dish.

For the baking project, I got to use a new mix that I got from my favorite VeggieGirl  :)

The other day, we were emailing back and forth about the Barefoot Contessa, how much we love her and her husband and her brownies and I came home to find these Barefoot Contessa mixes on my doorstep. Thank you so much!!!

I had never used her mixes before, and I think I’m officially addicted already. The ingredient list was great, and all I needed to add was butter and an egg – how easy is that?

The house smells amazing – Nick just ate one and said they were awesome so I’ve got to go get one of my own  ;)
