Three Course Lunch

Even though she can be completely frustrating one minute, she certainly makes up for it the next.

We’ve walked, played a little, eaten, and napped.

She is good for helping me rest and trying to get rid of this headache.

I needed to eat the rest of my soup from yesterday, so I heated that up while I put together a big salad.

We’re going to Nick’s parents house again this weekend so we can do Christmas with his sister and her husband, so I’m trying to make sure we eat stuff from the fridge this week. This salad helped me use up the last of the lettuce from last night.

  • romaine
  • carrot
  • scallions

The soup was just as good reheated today. I do like homemade soups better than canned/boxed, but this one was actually pretty good. Not too thin and it had a lot of flavor.

And instead of a chocolate plate (I’m saving that for dessert :) ), I had an Oikos with some apricot conserve + almonds.

Right now, I’m cuddling a sleepy puppy and going to take a break from looking at this screen – my head seems to get worse when I’m looking at the computer :\

A Tuna First + Time Sucker

Having a puppy is crazy!

Time just slips away and I don’t mind it one bit…except that she keeps me from doing other things like blogging!  :)

Once Nick got home last night, we took Maggie out to play for a little while – and it would be a lot nicer if it wasn’t freezing here. We’re having 20-30 mph winds and it’s only 30 degrees! Not fun playing-outside weather, for sure.

After playing with her a little while, we fed Maggie and Roxy and headed up to our chiropractor appointment. My back has been doing well lately, actually; I usually need much more work than Nick, but it’s been great the last few trips. Go me!

We got home and I started on a new dinner for us.

Would you believe that last night was my first time to ever have a tuna casserole?

Yup. I’ve never had classic tuna casserole, or any other kind, until last night.

As soon as I saw this Mediterranean Tuna Casserole, I knew I had to try it.

I checked out Betsy’s version and the original and made a few changes of my own – it turned out delicious!

  • I used 1 12 oz. can of fat free evaporated milk and about 1/2 cup 1% in the sauce and only 2 Tbsp or so of flour
  • To start the sauce, I used 1 can of whole tomatoes that I chopped up, the garlic, 1/2 cup diced roasted red peppers, and 1/4 of a red onion

For my first time to ever make or eat a tuna casserole, I think it was pretty great. I love the flavors in the pasta dish and it was so easy. Plus, it would be great with anything you have on hand: olives, other peppers, etc.

After we ate, I had the best intentions to blog, but between playing and cuddling, the night just got away from me.

Great news: Maggie didn’t whine at all when we put her in her kennel to sleep last night. I’m kind of surprised, actually…I’m not sure that will happen every night yet, but it was a move in the right direction.

 

I’m staying home again today – it seems that this headache shows up right when I get out of bed for some reason. It’s not as a bad as it was yesterday, but it’s still here.

While Nick watched Maggie, I made us some coffee and oatmeal for breakfast. Nick had brown sugar + pecans + chocolate chips and I made banana + reese oats.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon
  • 1 Tbsp peanut buttter
  • 1/2 Tbsp dark chocolate chips

And…since I know everyone wants to see her – here’s Maggie at Nick’s feet this morning.

Based on all these pictures, you might think that all she does is sleep.

But oh, she does so much more  :)

Biting, chewing, dumping her water bowl out all over the kitchen floor this morning…she is the cutest mess ever.

Soup, Sandwich, Snuggles

Agenda for today:

– Play and constantly use the bathroom for 2 hours

– Take a walk outside to the mailbox

– Eat lunch and treats as fast as you can

– Snuggle

Maggie was out this morning! I snuggled with her for an hour, but she slept in this spot for about 2-3 hours this morning.

I guess all those trips outside tired her out :)

We’ve eaten lunch, gone to the bathroom outside a few times, and I walked her down to the mailbox since she’s learning to be on a lead.

She did okay, but the dogs in a neighbor’s fenced-in yard freaked her out a bit. They bark all the time, so I don’t blame her.

Right before our short walk, I fed her lunch in her kennel and made me a quick + comforting meal.

I had some Campbell’s boxed veggie soup that I won in a contest, so I heated up a box (which is 2 1-cup servings) along with about 1/2 cup of the leftover soup from last night’s dinner.

The soup was pretty good! It was a blended veggie soup, as compared to the normal chunky veggie soups, so that was a nice change.

I added some crushed red pepper + garlic + salt on the top and had the soup along with a grilled provolone sandwich on Nature’s Pride whole wheat.

Grilled cheese using olive oil on the bread + in the pan = awesome. I just used my Misto to spray the pan and the bread a little instead of getting out the butter. I love the flavor of the oil on the bread, and it still gets crispy!

And I had to have a little dessert.

  • 2 pieces of my Mammaw’s homemade fudge
  • 2 chocolate covered pretzels that we made
  • a VT chocolate that my sister made us for Christmas :)

 

My head is feeling a little better – the headache isn’t completely gone, but at least my head isn’t throbbing like it was this morning.

Manic Maggie Monday

Well, the first night in our house went okay. She cuddled Nick until we went to bed and only whined for about 20-30 minutes in her kennel at bed time.

She woke us up around 4:45 or so this morning so Nick took her outside and then brought her in to cuddle with us this morning until it was breakfast time.

Everything was going well until she needed to poop 4 times again…a few happened in the house before we even knew she needed to go, but she’s gone outside more times than she’s had accidents in the house so that’s a good thing.

She’s such a good puppy! But she is a bathroom machine for most of the morning, and then she wants to play.

Of course, I haven’t been able to capture a good picture of her when she’s in her crazy playing mode – only once she’s calmed down and ready to sleep + cuddle :)

This is how she was while we were eating breakfast this morning, snuggled on top of Nick’s feet.

Nick and I took turns watching her and taking showers, and then Nick made both coffee and breakfast  :) 

He made some perfect eggs this morning, cooked a little bit of local sausage and I sliced up an apple for us to split.

I’m sitting here with Maggie at my feet, about to drink some coffee and lay down.

I’ve had a migraine off and on for the past 3-4 days, and my head was throbbing again when I woke up this morning so I’m not working today. Just looking at the computer long enough to do this post is making my head hurt even worse.

I’m hoping the coffee will help, but we’ll see!

 

It seems like Christmas went by so quickly! I feel like this weekend just flew by, as well, and I’m not ready for the holiday season to be over just yet.
