Okay, so things might be changing a little here soon.

Don’t worry. I’m not going anywhere! Things have (obviously) slowed down a bit (hello, newborn baby + toddler running my world right now) BUT I’m so excited for some of the recipes coming soon!

We’ve been doing a lot of research on health and food and disease prevention and gut health and how ALL of that is connected. And, because of all the research studies we’ve found, we’re eating a lot more plant-based. And I am SO excited about some of the meals we’ve come up with lately. They’ll be on the blog soon!

So I’m even MORE excited about working with Bob’s Red Mill again this year and using their products in some recipes here for you guys. We’ve loved Bob’s Red Mill for YEARS, and that hasn’t slowed one bit. Their muesli is my favorite, I always have their flours and almond meal on hand, and their oats really are the best around.

Plus, they have these extra thick rolled oats that are basically little bites of heaven. If you like oatmeal, you need to try the extra thick ones. You’ll never go back!

After making these again this week, I had to share these little bites with you guys. This is a spin on the healthier / vegan peanut butter cups I’ve been making for years now, plus a spin on my favorite no bake cocoa cookies (without the butter + white sugar!).

I couldn’t wait to use Bob’s Red Mill Extra Thick Rolled Oats in these because I wanted that chewy, hearty oat texture in these, holding the coconut oil, cacao, peanut butter, and maple syrup all together in one amazing bite.

These literally take less than 5 minutes to make.

LESS than 5 minutes! And all of us said hallelujah.

Because we’re ALL busy. I know – we all have a million things going on in our lives. With ourselves, our families, our friends, our jobs, our pets, our homes. But that doesn’t mean we don’t want or need a little indulgence (that’s still pretty healthy).

And! Even if you don’t LIKE to cook or aren’t much of a cook, you can make these. I promise. It’s just melting the coconut oil, cacao powder, peanut butter, maple syrup, and a pinch of salt together. Stir in the oats. Spoon into muffin liners. AND YOU’RE DONE.

Let them set in the fridge, and enjoy. You deserve it.

Vegan Oatmeal Chocolate Peanut Butter Bites

Think you don't have time to make yourself a little treat - especially one that's full of good-for-you ingredients? These little babies take less than 5 minutes to put together, and you'll be set for the week!

Ingredients:

  • 1/2 cup unrefined coconut oil
  • 1/2 cup unsweetened cacao or cocoa powder
  • 1/4 cup peanut butter (no sugar added)
  • 1/4 cup pure maple syrup
  • 1/4 tsp sea salt
  • 1 1/2 cups Bob's Red Mill Extra Thick Rolled Oats

Directions:

  1. Put the coconut oil, cacao powder, peanut butter, maple syrup, and salt in a small pot and melt everything together over low heat.
  2. Once the mixture is smooth, remove from heat and stir in the oats.
  3. Spoon the mixture into 24 muffin liners (paper or silicone).
  4. Place in the fridge for about 10 minutes to set. Keep refrigerated in a container.
