Valentine’s Day is sneaking up on us again.

How in the world does January go by so quickly each year? I feel like I blink and the entire month is gone.

We don’t normally do anything huge on Valentine’s Day, but we do like to either go out for a nice meal or make something special/different at home. I mean, it is the anniversary of our first date, so we definitely have to do something out of the ordinary.

In past years, we’ve gone to our favorite local restaurants and last year we made paella at home, which was awesome! We started with some Spanish wine, olives, and cheese, and watched a movie after dinner. Most nights, I’d go for that over a dinner out.

As of right now, I have no idea what we’re going to be doing this year! Probably picking something new to make at home for dinner….maybe putting a crib together? Who knows?

But I do know what’s probably going to be on the menu for dessert.

Ever since I first made these easy pot de cremes, I can’t stop thinking about them! They’re everything I love about pudding and creme brulee without the majority of the work. And when Lindt contacted me about coming up with a Valentine’s dessert using their Lindt LINDOR Truffles, I knew this would be the perfect dish.

Nick and I love the Lindt LINDOR truffles and have been known to put away a bag of them pretty easily. I love that the centers always seem a few degrees colder than the shell (how do they DO that?) and how smooth and melty they are. They really are the perfect little bite of chocolate.

For this campaign, we were challenged to come up with a Valentine’s recipe using Lindt LINDOR truffles and showing off the #LINDORmelt, aka their super smooth melting ability.

And that’s the best thing about this recipe! That’s basically all you’re doing – melting. And pouring. And then just waiting for the little pot de cremes to set up. So easy!

And even though I’m addicted to these for lots of reasons, I think my favorite thing about them is that you can whip them up in a few minutes, let them work their magic in the fridge, and they’re ready whenever you are! If your Valentine’s Day will be hectic until dinner, you can make these a few days ahead and just let them hang out in the fridge until you’re ready to dig in. There’s not days of prep time needed.

Honestly, as long as you have a blender, some Lindor truffles, an egg, and some milk, you’re set.

Easy Lindor Truffle Pot de Cremes

Looking for a new Valentine's Day dessert or just something easy to throw together for a special weeknight treat? These pot de cremes take almost no time to put together - most of the time is just spent waiting for them to set up! Easy and delicious, and totally customizable!

Ingredients:

  • 2/3 cup milk
  • 3/4 cup semi sweet chocolate chips
  • 7-8 Lindt LINDORMilk Chocolate Truffles, chopped, plus more for garnishes
  • 1 egg
  • 1 Tbsp granulated sugar
  • 1 Tbsp brown sugar
  • 2 Tbsp brewed coffee, chilled or room temperature
  • pinch salt

Directions:

  1. Heat the milk up in a small pan over medium heat until it just comes to a bubble.
  2. While the milk is heating, add the rest of the ingredients (chocolate chips, truffles, egg, sugars, coffee, salt) to a blender and, on low speed, process the mixture until the egg is beaten and the chocolates have been chopped up.
  3. Once the milk has come to a bubble, slowly pour the hot milk into the blender while it's running on low. The milk will gently cook the egg and melt the chocolate. Keep the blender running on low until you've added all the milk and the mixture is smooth.
  4. Pour the pot de creme into 4 small mugs or dishes, then place in the fridge to set for at least 8 hours or overnight.
