Happy Monday, friends! I’m finally getting back into the kitchen and will have some new recipes for you this week, but until then, I’m so happy to have a post from my friend Ali today. I “met” Ali through blogging and we got to know each other online, but we finally had the chance to meet each other last fall at Mixed and I’m so happy we did. She’s even sweeter in person and is funny and gorgeous and I wish we lived closer so we could cook and talk music all day long ;)

I am completely honored to be here guest blogging for Brandi today as she is on the mend after her surgery. Brandi has been such an inspiration and encouragement to me, as I’m sure she has been to many of you. I admired her site from afar for years, and enjoyed getting to know her over Twitter and social media. But I was finally able to meet her in person this past fall at Mixed, and she was even more delightful in person! In addition to sharing a love for food, I have always felt like she was a bit of a kindred spirit with music, sharing my love for The Civil Wars and of course, encouraging me to dive deeper into The Avett Brothers (her fav!). Who knows — I still have high hopes that we might one day start the first food blogging band (ummm…yes please, Ali). ;) Ha, but beyond food and music, I love that Brandi is just one of those people who overflows with kindness and joy. I am honored to have her in my life and call her a friend!
That said, I especially love Brandi’s blog for all of the great healthy recipes that she shares. So accordingly, I thought I would share one of my favorite healthy recipes with you — this simple Orange Carrot Ginger Juice.
I have been on a total juicing kick lately. And while most of the time I love just throwing in a total hodgepodge of 6-8 ingredients from whatever produce happens to be in my fridge, I also love juices like this that just celebrate 3 simple ingredients. In this case, I felt like going "orange", so I tossed in some carrots and oranges, and then some ginger for a little extra kick. And it turned out absolutely delicious, and BRIGHT orange. It was practically glowing!
If you don’t have a juicer, this would also be a great smoothie made in the blender. Or you could make a smoothie and then strain it to make juice. However you make it, this is a sweet and delicious one that anyone would happily enjoy.

Orange Carrot Ginger Juice Recipe
- 1 lb. carrots
- 3 naval oranges
- 1-2 Tbsp. grated fresh ginger (add more/less to taste)
Juice all ingredients and then stir to combine. Serve immediately or refrigerate up to 4 hours.
