Grilled Peanut Butter Rainbow Sandwich

I know this seems like a strange mix for a sandwich. It is a strange mix for a sandwich.

I don’t think many people would throw carrots and lettuce on a sandwich with peanut butter and raspberries. I’m pretty sure my husband would think this is totally weird. But it’s kind of why I love it.

It’s the best of both worlds: salty peanut butter mashed with fresh berries, a little crunch from the lettuce, and some extra sweetness from the carrots.

You could definitely eat this cold, too – it doesn’t have to be grilled – but I love how melty and luscious the peanut butter gets between crispy grilled bread.

Throwing all this stuff in one sandwich is also just a good way to sneak in some extra fruit and veggies instead of having your normal pb & j for lunch. Since the carrots are thin and lettuce doesn’t have a strong flavor of it’s own, you really only taste the pb & berries – I just like having a little extra texture sometimes and it saves me from having to pack a salad if I’m feeling lazy.
