One of the hardest things for me to do is figure out easy ways to feed a lot of people when our family is here. I mean, my goal in life is to be just like Ina, but I’m not there yet.

Since it’s usually just me and Nick, making sure I have enough food for 6-10 people boggles me a little bit.

So when DailyBuzz and Pillsbury asked for people to try making their own “Snackadium” at home, I knew it would be the perfect holiday lunch spread for us over the holidays.

I already had meals planned for when my side of the family was here over Christmas, but Nick’s parents, sister, and our nephews came up right before New Years and this Snackadium turned out to be the perfect lunch for all of us.

For the center of the Snackadium, I picked up a 3-section dip bowl for the center of the platter, so we could have maximum dipping action. My nephew loves dips, so this was a no brainer.

In one section, we had hummus for veggies + crackers.

In another section, I mixed up my lighter pimento cheese dip.

And in the center, we had some refried bean dip with extra salsa mixed in and heated up right before serving to have with veggies and tortilla chips.

For the base of the entire “stadium”, I got this great wicker tray at Pier 1 and some little dishes to serve as the “seating areas” to hold the veggies, chips, and crackers.

And for the main dishes of the Snackadium, we made hot dogs in crescent rolls (like these Chorizo ones, but I used Applegate Farms hot dogs instead). And on the other end of the Snackadium, I made some pepperoni pizza on the Pillsbury Whole Grain Crust, then cut them into squares to fit.

While the pizza and hot dog cresents baked, I cut the veggies, filled the trays with the dips, and got out the chips and crackers.

And as soon as everything was out of the oven and in the Snackadium, it was attacked by some very hungry kids. And adults.

After huge holiday meals of mashed potatoes and mac’n’cheese, this Snackadium tray was SO easy and fun to make! Plus, everyone ate whatever they wanted, and I didn’t mind having these leftovers in the fridge.

Now that I have the dishes to make one, you can bet there will be more! The superbowl is coming up….and weekends, period. I like having snacky things around on weekends. It makes lunches or dinners super easy.
