Pumpkin Spice Coffee Creamer

So…today is Halloween. Happy happy Halloween, everyone!

We’ve got no plans besides working (boo), coming home and making dinner (eh), and probably watching some HGTV (love me some Property Brothers!).

One of the worst things that happened when we moved to this house a few years ago is that we lost all of our trick or treaters. At our old place, we would sit outside with our neighbor, listening to his stories about the county and his childhood, while we passed out candy to all the little princesses and goblins.

But in our new house….we’ve got nothing. Not one trick or treater. It’s probably because our house sits pretty far off the road, so no one wants to come all the way up the driveway, but still – I miss passing out candy!

Maybe Nick and I will dress up and just sit around the house in costumes.

I could be a skier in my snow bibs. Or a football player with my jersey. Or….a girl in pajamas. I’ll probably go with the pajamas.

Even though Hurricane Sandy just knocked all the pretty fall leaves off the trees, it’s not officially winter yet, so pumpkin is still in full effect around here.

Fall = pumpkin = pumpkin spice coffee. It’s going to happen.

I made a homemade pumpkin syrup a few years ago, but I think I like this even better! No need to still add cream – this creamer has everything you want in one pot.

Pumpkin Spice Coffee Creamer

Makes: about 1 cup of creamer

Ingredients:

  • 1 cup milk or a mix of milk and cream
  • 2 Tbsp maple syrup
  • 2 Tbsp pumpkin puree
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • pinch of nutmeg
  • pinch of salt

Directions:

  1. Mix the milk, maple syrup, pumpkin puree, cinnamon, ginger, nutmeg, and salt together in a medium saucepan.
  2. Bring the mixture to a low simmer and cook, stirring occasionally, for 5 minutes.
  3. Strain the mixture through a fine sieve and store in the fridge.

  1. We live in a flat so we never get any trick or treaters either; I haven’t even seen any on the streets this year either! I love the idea of the two of you sitting around in your costumes together though ;)

  4. trick or treaters have never been a big part of my halloween… we didn’t live in a neighborhood growing up, and since then it’s just been apartments. maybe some day!
