Double Apple Breakfast Cake

It’s that time of year again.

Election time. When political ads clog up my tv time, radio spots interrupt our morning show, and those “debates” are on every. single. channel, leaving me to find Dirty Dancing on the Lifetime Movie Network (watching that last night got me so excited for Mixed – are you coming?!).

It’s not that I don’t like politics or don’t keep up with what’s going on. I vote – for the Presidential elections and for our smaller, local offices. It’s important to know what’s happening in the world and to find people to stand behind in our government.

But. These debates. I mean, can you really call them debates? They don’t even answer the questions that are asked! Like, ever. It never, ever happens. They might as well not even have moderators.

To solve this, I’ve got some ideas for the next round of debates:

  1. Each candidate will be hooked up to a lie detector for when they say something that goes against their voting record or when they’re promising something that they know will never, ever happen. As viewers, we’ll see a light go off or there will be a buzzer to let us know when they’re lying.
  2. The microphones will be connected to a timer. When that moderator says “you have 2 minutes”, that means they’ve got 2 minutes. Period. Get your point across or your mic cuts off.
  3. And…each candidate should be sitting in a dunk tank, hooked up with a harness. If they’re asked a question and don’t answer it (which, come on, they never answer the questions – they always talk about something else), the moderator has the button to drop them in the dunk tank for not answering his or her question. Then the harness will pull them back up so they can wait  for the next question.

Are these things possible? Are they hiring new people to be on the debate planning committee? Because I think more people would watch the debates if these things were happening. I know I would, if I knew I was getting honest answers. And if not, it’s at least entertaining.

I don’t think that will ever happen, so instead of focusing only on election stuff this time of year, I’m stuck on one of my favorite things around here: apples.

This part of the year is always tricky for me with fruit. Berries are done. Peaches are long gone until next July. We’ve still got figs, but they’re slowing down, and it’s not citrus season yet.

But I always forget about the apples. After the tart, summer berries, all other fruit kind of seems…sad. But when the berries are gone and the apples are fresh from the tree, crispy, and perfectly ripe? They’re just as good as those blueberries were a few months ago.

And since I’m still hooked on these breakfast cakes, I had to throw the first couple apples in one this week. I couldn’t wait for breakfast for this one, though, so I had it for an afternoon snack with a cup of decaf.

Double Apple Breakfast Cake

Makes: 1 cake

Ingredients:

  • 1 small/medium apple, cored and diced
  • 1/2 tsp cinnamon
  • 1/4 cup oat bran
  • 1/4 cup oat flour
  • 1 Tbsp ground flax seed
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • pinch salt
  • 1/4 cup almond milk
  • 2 Tbsp applesauce
  • 1/2 tsp vanilla

Directions:

  1. Pick the ramekin or mug you want to make your cake in and spray it with some oil. Drop the diced apple and 1/2 tsp cinnamon in the container and stir together. Heat for 1 minute in the microwave. *If you want to bake this cake rather than use the microwave, just toss the apple with cinnamon and mix in with the rest of the ingredients without cooking it first.
  2. Stir the oat bran, oat flour, flax seed, cinnamon, baking powder, and salt with the diced apple.
  3. Stir in the almond milk, applesauce, and vanilla until all the dry ingredients are mixed together.
  4. Microwave on high for 1 minute and 30 seconds and check the cake. If you use a taller, more narrow mug or ramekin, you may need to microwave for another 30 seconds to 1 minute to get the center cooked. *If you’d like to bake this cake instead, preheat the oven to 350 degrees and bake for 25-30 minutes until the center is cooked through.
  5. Once it’s done, let the cake cool for a minute before eating.
