Dark Chocolate Dipped Figs

You guys.

I am so completely and embarrassingly overwhelmed from all your emails and tweets and comments. Thank you so, so, so much – from the bottom of my heart – for your kind words and funny comments and encouragement. I wouldn’t have any of this without you guys, the ones who read every day and leave me notes and let me share my recipes and funny country life with you.

I can’t thank you enough! But I can give you figs.

Yesterday was one of the craziest days of my life, and I kind of feel like it didn’t really happen. My head is still spinning from it all, so today’s recipe is just about as easy as it gets.

Are you ready for this? We’re going to dip fruit in chocolate.

Tough, huh? ;) This is about all I can handle today. I’m still so overwhelmed with everything that we’re going out for dinner tonight! I don’t think I can concentrate long enough to cook. I’m too clumsy to try to work with a stove top or oven when I’m this distracted. I’ve tried that before and have the burn marks to prove it.

Most chocolate dipped fruit begins and ends with strawberries – and those are fantastic when strawberries are in season, but ours have been gone for months now and we won’t have them again until the spring.

The only fruit we have right now is figs. Lots and lots of figs.

I like figs. I love dark chocolate. So while I was making those raspberry cheesecake cups last week, I thought “I should try dipping these into chocolate – how bad could they be?”.

Not bad. Not one little bit. Just enough chocolate on a gorgeous piece of fruit.

I know it seems like the easiest thing ever – and it is! – I’m getting really excited to try all kinds of fruit: raspberries, blueberries, oranges, apples. I want them all!

Dark Chocolate Dipped Figs

Makes: 12 dipped figs

Ingredients:

  • 1/3 cup dark chocolate morsels
  • 12 medium figs

Directions:

  1. Pour the chocolate into a microwave safe bowl and heat for 30 seconds. Remove the bowl and stir the chocolate. Heat again for 30 seconds, then remove and stir. If the chocolate isn’t completely melted, heat again for 15-20 seconds until the chocolate is completely melted and smooth after stirring.
  2. Dip the bottom of each fig into the melted chocolate and place on parchment or wax paper.
  3. Put the dipped figs in the refrigerator to help the chocolate harden quicker.
  4. Serve once the chocolate has set.

Well cousin-in-law this comes in super handy as I am sitting on a basket of figs, fruit which I am not terribly fond of, however I love dark chocolate so will be dipping away after work… thanks for the great idea…. CONGRATS on your success. Can’t wait to have a few quiet minutes to watch the DVR replay this weekend. HUGS!

  9. Oh yum, I would love one right about now as an afternoon pick-me-up! I tried fresh figs for the first time last week [big dried fig fan] but wasn’t really impressed… But anything is tasty when dipped in chocolate ;D
