Trail Mix Nut Butter

Some things start out as good ideas…but just don’t work.

That perm I got in college. The bad music I used to listen to. The punk phase I went through in high school – I literally only shopped at Hot Topic for months. Sorry mom and dad.

I’ve got a ton of examples, and I’m sure you have your own.

But this trail mix nut butter? It may be one of the best idea I’ve ever had. I love trail mix. I love nut butters. And I wanted to really break in my food processor after only using it to shred zucchini, make pesto, and puree hummus.

And…one other bad idea?

Don’t put a wooden spoon down the shute of your food processor to press the sides of the nuts down. It won’t end well, and then you’ll spend 5 minutes picking shards of wood out of your nut butter base. Trust me.

Spoon incident aside – this trail mix nut butter has everything I love in a trail mix, blended together to drizzle on oatmeal, spoon onto yogurt, or slather on bread for an even better pb&j sandwich.

My favorite trail mix has peanuts, sunflower seeds, currants, chocolate chips, and m&ms (which are required in trail mix, right?). The best part of making a trail mix nut butter is that you can make it with your favorite mix-ins!

Love butterscotch chips and dried cherries? Go for it. If you like cashews and almonds more, whip those up instead of the peanuts and sunflower seeds.

I’m pretty sure a chocolate raspberry one will be happening soon, too.

Trail Mix Nut Butter

Makes: about 1 cup

Ingredients:

  • 2/3 cup roasted salted peanuts
  • 1/2 cup sunflower seeds
  • 1 Tbsp dried currants
  • 1 Tbsp chocolate chips
  • 1 Tbsp mini m&m candies

Directions:

  1. Pour the peanuts and sunflower seeds into the bowl of a food processor. Turn it on a medium speed and let it run for 5-7 minutes until the mixture is broken down and beginning to look creamy.
  2. Taking breaks if the processor needs it, keep running the peanuts and sunflowers together until the mixture is as smooth as you want it.
  3. Add the currants, chocolate chips, and m&ms and let it spin together for another minute.
  4. Scoop into an air-tight jar.

  10. This is a genius idea, I would have never thought of it but it sounds so delicious!! (And I’ve also had to search for plastic spoon pieces in my food processor- lesson well learned that those blades are indeed sharp)

  11. When I was younger all of my friends were getting their hair layered and I wanted in on the layering party. After much begging and pleading, my Mom finally gave in and I hated it! I still don’t know why thought that layers on my already curly, frizzy hair would look good! :-P
    This peanut butter looks great (unlike my hair post-layers!) I love playing around with different peanut butter flavors! :-D
