My dad is a classic man’s man.

He fixes everything: cars, the house, stuff in the yard, tools, roofs, and tree houses.

He loves coffee and football and hockey.

He’ll do anything you ask, help out however he can, and has the best laugh.

He’s also always been the only man in our house. With my mom and 3 daughters, he was usually the biggest meat eater AND the turkey carver and the burger maker and the chicken griller.

I don’t understand what the connection is between men and beef but it’s a strong cord that I’m not going to try to break.

So…for Father’s Day, I think there’s only 3 options:

Grill out and let the man do what he does best.

Go out to his favorite restaurant.

Make a huge pot roast, drop it over cheesy cheddar grits, and celebrate at home.

Beef. Starchy veggies. On top of more starch.

It’s the total man’s meal.

Nick loved it. I loved it. I know my dad would love it.

Especially because I would let him carve the roast himself, instead of me trying and just making a mess instead.

Classic Pot Roast with Cheddar Grits

Makes: 6-8 servings

Ingredients:

  • 2-3 pound beef chuck roast
  • 1 Tbsp salt
  • 2 tsp pepper
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 garlic cloves, chopped
  • 2 cups red wine
  • 2 cups beef broth
  • 1 sprig fresh rosemary

Directions:

  1. Preheat oven to 375 degrees.
  2. Heat a large, heavy pot over medium-high heat and add a drizzle of olive oil.
  3. Season the roast with salt and pepper and add to pan, stopping to flip the roast after 5-6 minutes until all the sides are browned.
  4. Remove the roast from the pan and set aside.
  5. Add the onion, carrots, and garlic to the pan and stir together, scraping the bits from the bottom of the pan.
  6. Once the vegetables have begun to soften (about 3-5 minutes), pour in the red wine and beef broth.
  7. Add the bay leaves and rosemary and carefully drop the roast back in the pan.
  8. Bring mixture to a bubble on the stovetop, put the lid on the pan, and place it in the oven.
  9. Cook the roast and veggies on 375 degrees for 2 and 1/2 hours. Remove the lid and cook for another hour until the sauce has reduced a bit and the roast is are tender.
  10. Serve over grits.

 

White Cheddar Grits

Makes: 4-6 servings

Ingredients:

  • 2 cups water
  • 1 cup milk
  • 1 and 1/3 cups instant grits
  • 1 tsp salt
  • 1 cup white cheddar cheese, shredded

Directions:

  1. In a medium saucepan, bring water and milk to a low simmer.
  2. Slowly whisk the grits and salt into the milk, stirring constantly until the grits have thickened up, about 5-7 minutes.
  3. Remove the pan from heat and stir in the shredded cheese.
  4. Serve.

  1. My dad’s favorite things are cars. Every few years he changed it. Never a new car, but always a convertible. I, now also are a car lover, but drive an old, classic car that my dad loves.

  2. My dad is a very passionate person. Any new hobby he picks up, he will become an expert and pro! He has done this from golf to wine making.

  3. My Dad is gone now, but alive in my heart. He was always ready for a joke and always was saying something funny. He loved homemade chocolate cake. He was the kind of guy that ate some of the first batch of gravy that I made when I was a kid, (it could be cut in squares) and gave me the compliment of “Great dinner, Sis”,

  5. My dad is an inspiration and huge influence on me. I enjoy opera because I grew up with him playing records of Puccini on the weekends. I love fruit because my dad would always cut up an array of seasonal fruit after dinner for the whole family. I’m intrigued by science and politics because my dad is a scientist and was always willing to discuss current events with an open mind that looked at all sides of the story. I also love art because my dad appreciated beautiful buildings, paintings, nature. He also inspired me with the love of travel, joy, and curiosity. I guess you can say I really truly love my dad!

  6. My dad is the biggest coffee drinker. He must go through three or four pots of coffee per day. When I was younger I wanted to be just like him, so I would drink coffee, too. I always joke that he’s the reason for my caffeine addiction, lol.

  7. My dad loves fixing up cars. He has been working on a ’67 Camero for about 15 years.

  8. My dad continues to amaze me with all that he does, but I’m going to go with a fun food fact– his favorite dessert is blueberry pie :)

  9. My Dad lives on the Big Island of Hawaii…in a yurt! He used to live in busy Seattle but much prefers the laid back Hawaiian lifestyle.

  10. My dad collects antique bottles. And he doesn’t just collect them, he DIGS THEM FROM THE GROUND HIMSELF. He and his buddies literally go on bottle digs in historic areas, searching for antique bottles. He has bought and sold bottles for hundreds of dollars, been to antique bottle shows, and has thousands of bottles on display in his home. If that isn’t unique, I don’t know what is! haha

  12. Growing up my dad made 1 meal; we called it ‘prison food’ he called it ‘dinner.’ It was basically powdered pea soup he liquefied, then added to a bread bowl. To this day we still make fun of him. He’s the best and he LOVES beef! In fact, he’s love this meal!

  14. Omg, this is like a staple in my dad’s diet. Total steak and potatoes kind of guy. When I first started doing the flexitarian thing and not eating meat every single day, he really freaked out. He thought I’d be malnourished for life.

  19. My dad is amazing! He’s in Japan for a year for work this year and, even though we typically live in different states, I miss seeing him like crazy!

  27. Whenever my dad thinks he’s funny, gets sentimental, or gives away one of his daughters, he flares his nostrils – it’s his trademark. He also REALLY loves food. I’ve never seen anyone else create such an artistically perfect plate before he’ll eat one bite – such fanfare for a sandwich and chips!!

  28. My dad is one of the kindest people I know and has the patience of a saint. Being the only man in our house he put up with cheerleading competitions, orchestra concerts, buying tampons and weekend long shopping trips.
