Raspberry Chocolate Chip Frozen Yogurt

by admin on June 29, 2012

I’ve got a new addiction, that starts with F…and ends with …rozen yogurt.

I knew that making ice cream and frozen yogurt would be easy with an ice cream maker, but I didn’t know just how easy it would be to whip up a fresh batch of frozen yogurt.

You don’t have to make a custard base. There’s no cooking, no cooling, no keeping it in the fridge overnight before pouring into your machine and letting it go so you can have dessert.

I’ve still got plans to make real ice cream soon. It’s just SO easy to make frozen yogurt – I can’t stop!

This batch was really just a reason to use these raspberries. And where there’s raspberries, there should be chocolate chips.

If you’ve got yogurt hanging out in the fridge and an ice cream maker collecting dust, here’s your reason to get it out this weekend.

This is basically a health food – and it could definitely pass for breakfast on a steamy summer morning.

Raspberry Chocolate Chip Frozen Yogurt

Makes: 8-10 servings

Ingredients:

  • 4 cups plain yogurt
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 3/4 cup honey
  • 2 tsp vanilla bean paste or vanilla extract
  • 1 and 1/2 cups fresh raspberries
  • 1 cup semi-sweet chocolate chips

Directions:

  1. Get your ice cream maker ready, based on your directions.
  2. In a large bowl, mix the yogurt, milk, heavy cream, honey, and vanilla bean paste together.
  3. Pour the yogurt mix into the ice cream machine and turn it on. Let the frozen yogurt begin to freeze and set up, about 10 minutes.
  4. Crush half of the raspberries, then toss the crushed berries and the remaining whole berries into the frozen yogurt.
  5. Add the chocolate chips to the frozen yogurt and let the machine run for another 3-4 minutes.
  6. Serve right away if you like a softer consistency. Pour into an airtight container and freeze if you want the frozen yogurt to set up a bit more.

PS: If you don’t have an ice cream maker, you can use the ziploc bag method OR you can go even easier and buy some good quality plain or vanilla frozen yogurt. Then just let it soften, add your mix-ins, and refreeze before serving.

Chicken and Pepperoni Pizza Quesadillas

June 28, 2012

Sometimes, coming up with “guy food” is hard. There are some nights that I would be fine to just have a salad or little snack plate, call it dinner, and be done. No turning the oven on. No pots and pans to clean. Easy. But that usually doesn’t go over well with the other half [...]

Make Your Own Brown Sugar

June 27, 2012

Remember how I can’t remember anything? Lucky for you(?), that hasn’t changed, so I will always have ridiculous stories to tell. Like how I’ve forgotten to buy brown sugar 3 weeks in a row. 3 weeks! And before you ask, yes I wrote it down. Yes I marked it on my list on the fridge. [...]

Last night, I went out for my birthday dinner. 4 days before my actual birthday. You do this, too, right? Since my birthday is on Sunday, most of our favorite places won’t be open. Also…I didn’t feel like cooking anything last night after a full day of craz-ay work, baking bread on my lunch break, [...]

This week….is weird. I’ve made about 14 things this week that I’ve never made before. Most of the them have worked out. A few? Not so much. I’ve been having crazy strange dreams about things that I know nothing about. Like last night. My dream started with me having a spat with Phillip Phillips, just [...]

So…I don’t know what to say about these. For two weeks, I didn’t think they would happen. I failed every time I tried to make them. And for the past two weeks, I’ve been a little mad every time I looked at these pictures because they took me so long to finally get right. I [...]

Nutella, Honey, and Coconut Semifreddo

I’m not normally one to make foods in molds, but this all changed last week. Jello molds? Nooooo thank you. I like my jello plain, without hunks of fruit, thank you very much. But when DeMarle at Home sent me this fancy fluted mold, I knew I would finally try to make a semifreddo at [...]

My dad is a classic man’s man. He fixes everything: cars, the house, stuff in the yard, tools, roofs, and tree houses. He loves coffee and football and hockey. He’ll do anything you ask, help out however he can, and has the best laugh. He’s also always been the only man in our house. With [...]
