Strawberry Feta Skewers

Can you call a recipe a “recipe” if you don’t actually cook anything?

Maybe this should just be called “good snack instructions” instead.

Wash fruit. Slice feta. Grab mint. Stack. Devour.

When a snack starts like this, you know it’s going to be a good thing.

I’ve had strawberries and feta together before – on salads and weird-but-tasty pizzas, but never on their own like this. But when you’ve got cups and cups of strawberries ripening every day…you gotta eat while the eatin’ is good. And that means coming up with some new ways to use them when you don’t have time to freeze them or make jam.

I’ve already made these twice in the last week – some with mint and some without. I love it with the mint because it helps balance out the super salty feta and sugary sweet berry, but they’re just as good without the mint if you don’t have it.

It’s like summer on a skewer – get on this!

Strawberry Feta Skewers

Makes: 20 bites/skewers

Ingredients:

  • 20 small to medium strawberries
  • 1/2 pound feta
  • 20 mint leaves

Directions:

  1. Slice the tops off the strawberries. Cut the feta into cubes.
  2. Take a toothpick and skewer the strawberry, mint leaf, and feta. Repeat until all the skewers are made.

  4. These look so sophisticated – like an appetizer served at a fancy restaurant! I have loads of feta cheese stashed in my fridge – gotta get some strawberries! I’ve also heard that the watermelon+feta combination is good…have you tried it?

    • i have NOT tried watermelon and feta together, but I want to! i have to wait a few more months for watermelon here.

  11. Omigosh these look delicious and so easy! They’d be perfect for when unexpected guests show up and you want to serve something quick and delicious! Plus when feta is involved, it has to be good!
