Get Cooking for Cinco de Mayo

I have no reason to celebrate Cinco de Mayo…except that I really love margaritas and guacamole.

Is that enough? I sure hope so.

My actual Cinco de Mayo will be spent at the craziest neighborhood-wide yard sale that I’ve ever seen. We’ll be up early, selling stuff to people from all over the place, drinking coffee, and taking turns eating breakfast.

Maybe we’ll go out for Mexican later that day.

Or, maybe we’ll just take a siesta after the early morning yard sale-ing. That sounds about right.

If I wasn’t spending the day selling our junk, I’d probably want all of these for my Saturday night meal.

Mojo Grilled Steak Tacos

Smoky Bean Dip

Mexican Potato Nachos

Zucchini Corn Cakes

Mexican Rice

Enchilada Casserole

Spiced Chocolate Coffee Creamer for my morning coffee

Mexican Chocolate Cookies

Triple Citrus Margaritas

Happy Eating!

  4. What a delicious roundup of Cinco de Mayo favorites! All your dishes look so delicious, especially the steak tacos, but it’s the margarita that’s really calling my name! Fabulous recipes!

  5. Ohh yay for Cinco de Mayo! A neighborhood-wide yard sale sounds intense! But fun! I love Mexican food and celebrated a little early last night myself! I’ll be celebrating Derby Day on Saturday so I’ll be trading margs for mint juleps! I think that means I better make of this on Friday night instead!

  6. Hi Brandi. The way I see it, any reason to have good, healthy Mexican food is reason to celebrate indeed. Thanks for the inspiration and great recipes. Have a good week. Ole.

  8. umm one of each please! ;)

  9. Love all of the recipes you posted:) I have zero cooking skills, so maybe I can learn to cook better with the help of these recipes (and all of your recipes)! I am so impressed by your photos that you post with the recipes. You have some serious photography skills–I love how you blur out the background and focus in on an image. You must also have a very nice camera:)
