Coffee and White Chocolate Chip Coffee Cake

Coffee is a tricky thing.

When you’re a kid and you see coffee in cartoons, you think “Coffee must be good – everyone is dunking donuts in their cups and drinking it down as fast as they can”.

Before I ever tried coffee, I thought it would taste sweet or kind of like vanilla. Why else would everyone be dunking their cartoon donuts into it and then eating them in 3 bites or less?

News flash: coffee does not taste always taste good on its own.

And…if you try to drink it as fast as they do on tv, you’re going to burn your tongue.

I’ve had some really, really bad  and too hot cups of coffee. Most of the worst have been on airplanes. Why can’t good coffee exist in the air?

For a great cup of coffee, you need:

1. Quality beans, ground right before you brew.

2. The right kind of brewing – french press, pour over, siphon, your choice.

3. Good water.

4. Friends, family, or a cuddly pet to share your coffee time.

Besides the cartoon donut and coffee trick, I’ve also never understood why coffee cake is called coffee cake when there isn’t coffee in the cake. I always expect coffee cake to have some coffee flavor and it never does.

Until now.

This coffee cake really is a coffee cake. Plus white chocolate chips and that streusel top that makes it okay for breakfast.

Dunkable? It’ll make a mess, but it sure is tasty.

Coffee and White Chocolate Chip Coffee Cake

Makes: 9-12 servings

Ingredients:

  • 1 cup buttermilk
  • 1/4 cup oil
  • 1/3 cup sugar
  • 1 Tbsp instant espresso
  • 1 tsp vanilla
  • 1 1/2 cups whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 2/3 cup oat flour
  • 1/4 cup oil

Directions:

  1. Preheat oven to 375 degrees.
  2. In large bowl, whisk the buttermilk, oil, sugar, instant espresso, and vanilla together.
  3. Stir in the flour, baking powder, and salt.
  4. Fold the white chocolate chips into the batter.
  5. Pour mixture into 8×8 baking dish.
  6. In small bowl, mix the brown sugar, cinnamon, oat flour, and oil together until the mixture is combined and a little crumbly.
  7. Sprinkle the topping over the batter.
  8. Bake at 375 for 35-40 minutes, until a toothpick comes out clean.

  1. I’ve always thought the same thing about coffee cake! It’s nice to actually see a recipe that does what it says, the combination of coffee and white chocolate is pretty dreamy too.

  3. I assumed for the longest time that coffee cake had coffee in it. I also assumed it wasn’t nearly as good as regular cake because it was meant to be had in the morning.

    Clearly I was wrong on both accounts. Because if you can find a good coffee cake? Oh man…

  4. I have loved coffee since I was a kid. My grandma taught me to drink it black and to dip my chocolate chip cookies in it and that’s still the way I drink it…although, a few less cookies these days. But coffee cake, I am in on this. Love the white chocolate chips…it’s so grown-up! :)

  13. Brandi, this coffee cake looks incredible! as i think about it, i don’t think i’ve ever tasted or seen coffee cake with white chocolate chips in it! i’ve seen butterscotch, chocolate chips, and cinnamon chip but not white chocolate. delicious!

  14. i made a banana espresso coffee cake once that we LOVED…(and i’m not much of a coffee drinker)…so i definitely need to give this a try! hopefully next weekend!

  15. Ummm this looks and sounds amazing. I’ve yet to bake with oat flour… so I think this is a new challenge for me!
