Strawberry Mint Sparkling Lemonade

Today is a very special day.

Not because it’s Monday. Not because we’re now more than halfway through April (and how did that happen?!).

Nope.

Today is special because we’re having a virtual baby shower!

Caroline and Logan are welcoming a baby in just a few short weeks, and I’m so happy to be bringing a treat for this online shower. I’m not sure who thought to start doing online surprise baby showers, but I love it – what a fun surprise to wake up to!

So…what do I “bring” to a baby shower full of food bloggers?

No cupcakes from me, I’ll just say that. My decorating abilities are severely lacking compared to most people. Plus, I knew there would be a great list of sweets and savory dishes.

One thing I never think about until the last minute is drinks for get togethers like this.

Having 1-2 fun drink options besides water or tea helps bring everything together.

Plus, strawberries are trickling into the market right now, and I couldn’t pass up the chance to make a light and summery drink to share for the shower.

This cool twist on lemonade is full of crushed strawberries, muddled mint, sugar, and sparkling water to take a bit of the pucker out of the lemonade and keep it light and bright.

Strawberry Mint Sparkling Lemonade

Makes:  8-10 servings

Ingredients:

  • 1 cup medium strawberries
  • 2-3 Tbsp fresh mint leaves
  • 1/4 cup sugar
  • 1 cup lemonade
  • 1 liter sparkling water

Directions:

  1. Cut the tops off of the strawberries, slice them in half and place them in the bottom of a pitcher with the mint and sugar.
  2. Muddle the strawberries, mint, and sugar together with a muddler (or a spoon) until the strawberries have started to break down and the sugar is dissolved.
  3. Pour the lemonade and sparkling water over the strawberry mix, stir, and serve.

This drink looks absolutely amazing and I have been totally crushing over strawberries lately (thankfully they are cheap now that they’re in season) and this drink looks so refreshing! I’m getting so sick of water and this looks like just the drink to get me going (especially in the heat of SC). :D

  13. This looks delish and seasonal. Over here, they call Sprite or 7-Up type drinks “lemonade”. So sparkling lemonade wouldn’t be unusual! :) I know it’s not quite the same but I could see crushing some strawberries and mint from my window sill into Sprite this summer! Janet

  26. First of all, I love the virtual baby shower idea! Secondly, I think you read my mind…I was JUST thinking about how I never make very creative drinks. The closest thing I’ve come was accidentally using grapefruit juice to make mimosas instead of OJ. It was delicious, yes, but perhaps I should work with purpose from now on. ;)
