Endive, Orange, and Feta Salad

My mom told me that when she read my truck and the groceries story last week, she kept thinking about that commercial with the lady trying to open a car that isn’t hers while talking about cornish hens and endive.

Well, first, she told me she was cracking up at me and the groceries.

Then, she thought of the commercial.

Have you seen it? I think it’s for a cell phone, but that’s not why I like it.

I like it because I’m pretty much that lady sometimes: trying to get into cars that aren’t mine and talking about food on my cell phone.

But the most important part of this commercial is how to say endive.

Do you say it en-diive OR ahn-deeve?

Which is right?

I say en-diive. Ahn-deeve sounds like I’m trying to be too fancy, and that doesn’t fly around here.

If you live in a town with one stoplight, you can only be so fancy before you really stick out.

So I’ll take my en-diive, please and thank you.

This is my new favorite salad. I had never had endive before a few weeks ago, and I’m now officially addicted. Right after Valentine’s Day, I received a bouquet (seriously!) of endive from Discover Endive and had to put it good use while the oranges are still sweet and juicy.

Endive + romaine + orange segments + feta cheese is the new fancy salad ’round these parts, hands down.

Endive, Orange, and Feta Salad

Makes: 1 large salad or 2 starter salads

Ingredients:

  • 1 head romaine lettuce, chopped
  • 2 heads endive, halved and sliced
  • 1 orange, segmented, plus the juice
  • 1/4 cup feta cheese, crumbled
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp cracked pepper

Directions:

  1. Toss the chopped romaine and endive together in a large bowl.
  2. Add the orange segments and then squeeze the remaining orange core over the salad, letting the juice coat the salad.
  3. Fold the feta cheese into the salad.
  4. Dress with olive oil, salt, and pepper before serving.

  1. hahahha I totally know that commercial…and I’ve done that before :) The salad sounds so so good. Citrus in salad is always good and you can’t go wrong with feta (IMO!)

  4. I say endive too. This reminds me of my brussels sprout salad with oranges and goat cheese. Definitely love pairing greens with citrus and cheese!

  10. Haha now that you mention it, I know that commercial! And endive is one of those ones where I always say en-dive but I think it is pronounced ahn-deeve, kind of like bru-shet-a which is supposed to be bru-sket-ah. This salad looks delicious and let’s be serious- I’m down for anything with feta on it!
