Happy happy Friday!
Normally, I would be at work, but today, I’m taking a road trip with Nick. A-woohoo!!
Since I’m not going to be home to make any festive St. Patrick’s Day meals or desserts, I thought I would share my favorite minty + green dishes from last year.
These Mint Mocha Brownies are still one of my favorite recipes. Fugdy, minty, and a hint of coffee.
Green mint chips are just fun! These mint chocolate cookies are actually pretty healthy – but you’d never know.
What could be better than a mint mocha, one of my favorite coffee drinks ever?A Mint Mocha made with Girl Scout Thin Mints. Yup. It’s probably a good thing I don’t know any girl scouts.
So why the road trip?

I went to FBF Nashville last fall and LOVED it. It’s a smaller conference, which means you actually get to talk to just about everyone attending. The sessions look great this year, and I can’t wait to see a lot of old friends and make some new ones.
I’m even more excited for this year because it’s at Disney World!! I’ve been once – in high school – for a chorus competition, but I didn’t get to see much of the parks. I’ll be busy all day Saturday with the conference, but I’m psyched to have some time in the parks today and during breaks this weekend.
