Peanut Butter and Jelly Breakfast Rolls

From elementary through high school, most of my lunches were packed, with love, by my mom.

The usual suspects:

sandwich, of some kind.

mini bag of chips.

fruit.

granola bar.

My two favorite sandwiches were always a turkey/cheese sandwich that I would load with chips before eating or a pb&j.

The best part of the midday pb&j was this – after sitting in my locker or lunchbox all morning, the fluffy bread had soaked up all the flavor of the peanut butter and jelly.

It was soft, tender, and maybe a little mushy. But still, perfect.

I always think of peanut  butter & jelly as a lunch option, but one of my favorite quick breakfasts is a toasted version of the classic sandwich.

Last month, I was asked to participate in a recipe contest with Stonyfield and Peanut Butter & Co to come up with a recipe using Stonyfield yogurt and PB&Co Peanut butter – two of my favorite companies!

I knew exactly what I wanted to make.

I love cinnamon rolls. I love orange rolls.

I had dreamed, literally, of peanut butter and jelly rolls and finally decided to make them happen.

These aren’t your normal breakfast roll. They’re stuffed with creamy peanut butter and sweet jam and slathered in a peanut butter and yogurt glaze. Sweet and salty, the perfect combination.

PB & J Rolls with Peanut Butter Yogurt Glaze

Makes: 8-10 servings

Ingredients:

  • 3 tsp yeast
  • 2 cups whole wheat pastry flour
  • 2 cups all purpose flour
  • 1 cup Stonyfield plain yogurt
  • 1/4 cup water
  • 2 Tbsp butter
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 egg
  • ½ cup PB&Co. White Chocolate Wonderful peanut butter
  • 1/3 cup jam

Glaze:

  • ½ cup PB&Co. White Chocolate Wonderful peanut butter
  • ½ cup Stonyfield plain yogurt
  • 1 ½ cups powdered sugar

Directions:

  1. Combine 2 cups of whole wheat pastry flour and yeast in a stand mixer or large bowl.
  2. In a sauce pan with a heavy bottom, combine yogurt, water, butter, sugar, and salt. Heat over low heat just until it reaches 125°F or until small bubbles begin to form around the edges. Remove from heat
  3. Add the warm yogurt mixture to the mixing bowl with the flour-yeast mixture and blend on low speed. Mix for about one minute.
  4. Add the egg and mix the dough for another minute until the egg is incorporated.
  5. Add 1 cup of all purpose flour slowly to get a dough ball to form. Turn the mixer to medium speed, adding more flour as needed. Once dough ball is formed, allow dough to mix for about 3 minutes or until you have a nice smooth dough ball.
  6. Remove the dough and place into a greased pan and cover with a towel. Allow to rise for 45 minutes.
  7. Once the dough has doubled, punch down and roll out into a rectangle on a floured surface.
  8. Spread the peanut butter over the dough, then top with the jam, spreading out to cover almost all the dough, leaving a ½-1” edge.
  9. Roll up the dough (starting with the side farthest away from you). Slice into 12 pieces and place in a greased baking dish.
  10. Cover and let the rolls rise again for 30 minutes.
  11. Turn oven on to 350 degrees.
  12. Bake rolls 20-25 minutes and let the cool for 5-10 minutes before adding the glaze.
  13. To make the glaze, whisk the peanut butter and yogurt together. Add in the powdered sugar and stir until the glaze is thick and smooth, adding more sugar or yogurt to get the texture you want.
  14. Drizzle the rolls with glaze and serve.

  9. Chips in a sandwich! Chips always belong inside the sandwich: Especially tuna salad. My dad would pack me those lunches, too, and I’ll always love that memory.

    This sounds fantastic, and you brought me right back to that noontime rush to the cubby for that perfect pbj from home, with the white bread just soggy enough from that jelly. Perfect.

  14. Oh. My. Gosh. These look amazing!!! I love pb&j and have it almost every morning on a piece of whole wheat toasted bread and I love to put it on a tortilla too and eat pieces of it. So this is basically like my dream! I need to make this for the next brunch I go to!
