Baked Jalapeno Popper Dip

Still looking for some Superbowl snacks? I’m guessing that’s been the most searched phrase for the past couple of weeks – and for  good reason! Probably even higher than searches for The Vow trailers and Oscar gown predictions.

I am a huge HUGE fan of college football, but not so much when it comes to NFL. So…if I ever end up watching the game, it’s usually for 3 reasons: 1. The teams are good or entertaining to watch, 2. I want to see the commercials, and 3. It’s a good reason to just snack for 4 or 5 hours.

There is no need for an actual meal during the game.

A table full of dips, spreads, veggies, crackers, and bite size snacks are what football is all about.

One of the best appetizers ever(?) is definitely jalapeno poppers. I wanted to make a spin on that – a little healthier and in dip form! – so you can have all the same flavors of those little poppers, but be able to use all your crackers, pitas, and cut up veggies to enjoy it.

I kept it pretty simple with this one so i could really enjoy the rosemary flavor of these new Wasa flatbreads in the dip. Have you tried these new flatbreads? I love them! They’re thin and crunchy, so they’re great to use as a cracker, but they’re also really good to use in recipes, like this dip.

You guys know much I’m obsessed with rosemary lately – I had no choice but to make something to go with them!

Cream cheese + yogurt + jalapenos + garlic + white cheddar + rosemary flatbreads makes for one delicious dip.

And even better? This takes minutes to mix up. Just pop it in the oven 30 minutes before your party is starting, and you’re set!

Baked Jalapeno Popper Dip

Makes: 8-12 servings

Ingredients:

  • 8 oz. low fat cream cheese, softened
  • 1/2 cup plain yogurt
  • 2 garlic cloves, minced
  • 2 jalapenos, finely diced
  • 1 cup white cheddar cheese, shredded
  • 1/3 cup crumbled rosemary Wasa Flatbreads
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp smoked paprika

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix the softened cream cheese with the yogurt, garlic, jalapenos, cheddar cheese, crumbled Wasa flatbreads, salt, and pepper.
  3. Pour into a small baking dish and sprinkle with the smoked paprika.
  4. Bake at 350 for 25-35 minutes until the dip is bubbling around the edges.
