My cooking challenge is up and running!

You guys had such great comments on that post and really got me motivated to finally go through all the recipes I have marked to make.

I know this isn’t a baked dish, but I think calling my challenge posts “baking through the blogs” would be more fun than just a challenge. And I like alliteration and use it whenever possible. 

Baking through the Blogs #1 – here we go!

My first choice was this pasta I found myself drooling over just a few weeks ago.

If I’m going to cook pasta, I should always get recipes from my friend Paula at Bell’alimento – she knows her stuff!

I saw Paula post a recipe for Penne with Olives and had to make it.

Why? Because there is greek yogurt in this dish.

Greek yogurt! 

I couldn’t get over the idea of the creamy yogurt stirred into pasta with fresh tomatoes, salty olives, and the last of our summer basil.

Thankfully, Paula will never steer me wrong with pasta.

Since I normally try to keep our weeknight dinners on the healthier side, I used some brown rice linguine instead of regular penne. The rest of the recipe was already full of healthy, whole foods, and the tang and creaminess from the greek yogurt pulled all the flavors together.

I would never think to put basil and olives with yogurt, but I will definitely be making this again.

It came together so fast – I can’t wait to make it again next year when I have more fresh tomatoes from the garden.

A successful new recipe trial, a healthy dinner, and leftover yogurt to snack on tomorrow?

Now that’s good living.

  3. This sounds GREAT! I have wanted to try using Greek yogurt in a pasta dish but I worry that it will curdle or turn sour :/ I’ve used it multiple times in Mexican dishes as a sour cream sub, I gotta try it Italian style now :)
