No Bake Peanut Butter Oatmeal Bites

If there’s one food memory that makes me think of my mom, it’s her no bake cookies.

Preacher cookies, no bakes, whatever you call them – her cookies were always different than everyone else’s.

1. She never, ever used peanut butter in her no bakes.

2. No matter what, her cookies were always perfect.

I’ve been knee deep in grain recipes lately and couldn’t help trying a totally different twist on a “no bake” cookie.

These aren’t like regular no bake cookies, but they are just as good! We devoured these by the handful, right out of the fridge or crumbled into yogurt.

Plus, making no bake “cookies” without the butter means you can have a few extras, right?

I’m always a little leery when I make desserts with peanut butter in them because I just never know if Nick will like them or not.

He loves Reese cups, but isn’t a big fan of desserts where the peanut butter and chocolate are mixed together, like in cakes and cupcakes.

I guess the peanut butter and chocolate were separate enough in these snack bites. He loved them!

The great thing about these is that you can make them with whatever you want.

Don’t like coconut? Leave it out.

Ran out of chocolate chips? Use butterscotch or some type of dried fruit or nut.

Not a fan of peanut butter? 1. Who are you? and 2. Sub in almond butter or sunflower seed butter, no problem!

I’m pretty sure these would turn out great no matter what you put in them.

Just do it! I’m already planning out the second batch.

No Bake Peanut Butter Oatmeal Bites

Makes: 30 – 40 bites

Ingredients:

  • 2 and 1/2 cups old fashioned or quick oats
  • 1/2 cup unsweetened coconut
  • 1/2 cup chocolate chips
  • 1/3 cup sunflower seeds
  • 2 Tbsp ground flax seed
  • 1 tsp salt
  • 3/4 cup peanut butter
  • 3/4 cup honey
  • 1/4 cup melted coconut oil or other neutral oil
  • 1 tsp vanilla

Directions:

  1. In a large bowl, mix the oats, coconut, chocolate chips, sunflower seeds, flax seed, and salt together.
  2. In a separate bowl, stir together the peanut butter, honey, coconut oil, and vanilla.
  3. Stir the peanut butter mixture into the oats and mix together until all of the oat mixture is coated.
  4. Place the mixture in the refrigerator for 20-30 minutes to let the peanut butter mixture set up a little bit.
  5. Once the mixture is chilled, form it into 1” rounds and place on a parchment-lined baking sheet.
  6. Place in the refrigerator for 5-10 minutes or until set. Store in the refrigerator.

    Exactly!!!! I ask my friend this all the time who doesn’t like peanut butter. I wonder how he’s gotten this far in life. I think he’s missing out!

  21. I don’t have coconut oil. What do you mean by another neutral oil?

    • if you don’t have coconut oil, i would use something like canola or safflower rather than olive oil that has a stronger flavor.

  26. I finally made these this morning and have to ask, “Why didn’t I make these sooner???” My four-year-old is home sick today and absolutely loves them. I can’t wait to hear what his big brothers have to say about them. My only note is that they are a bit too sweet for me, but that might be because I used almond butter (I’m allergic to peanuts, sadly). I think I’m going to experiment with all kinds of different butters and add-ins with these. Yum!
