We are stocked with fresh corn, zucchini, and tomatoes right now.

It seems to be a never ending cycle: I make a recipe that uses up what we have only to see that Nick is coming back up the hill with another arm full of vegetables.

It’s definitely what we wanted, but it also means that, right now, most of our meals look like this:

Eggs with tomatoes and avocado for breakfast.

Brown rice pasta salad with lots of zucchini and cilantro from the garden and a side of tomatoes.

And our dinner the other night. A zucchini, onion, and tomato frittata with hashbrowns and fried zucchini.

So…got any ideas for corn, tomatoes, or zucchini? Smile The more recipes, the better!

  2. You can freeze some of your tomatoes and use them in place of canned tomatoes in the winter. That’s what I do with my extras!

  3. Just freeze them in pieces raw.

  4. Fresh salsa! Tomatoes, onion, garlic, jalapeno, cilantro and salt. Throw it all in the food processor. So much better than the canned variety.

  5. Oh how I love all this fresh, local produce. It’s my favorite time of year. I just posted a recipe for veggie pancakes that I used zucchini for.

  6. Oven-dried tomatoes are like the best and healthiest snack ever! :D
    And with zucchini, you could do a zucchini ribbon salad (I put lemon zest and a little spicy red pepper on mine, mmh!)

  7. I made quesadillas with corn, zucchini and black beans a few weeks ago and they were awesome. Super light and flavorful!

  8. Chiming in again… I just came across a plug for ravioli with a tomato basil cream sauce. Sounds yummy. I’m sure you could pull something together like that.

  13. Oh girl I’ve got a ton of stuff for all those things! Lots of salsas for the tomatoes and the corn. Corn chowder and zucchini bread (with chocolate of course!). :)

  14. Gazpacho in the blender! Make a ton now and then freeze some and save it. When you’re craving it in the winter months and have no fresh tomatoes to make a batch, you’ll be glad you have some to thaw out in the fridge.

  15. Make zucchini boats. Slice a zucchini lengthwise and with a spoon carve out the middle flesh. Set the boats aside. Chop the flesh and cook with ground bison. Diced onions, diced carrots, tomatoes and corn. Place the boats on a baking sheet and fill with the meat mixture. Top with some pepperjack cheese and broil in the oven until melted and bubbly.

  16. Corn, zucchini (I normally add squash too, but not necessary), cheddar cheese and some fresh chilli- green chile like you find in New Mexico if possible. If not, fresh jalapenos should work. Simply sautee and sprinkle on the cheese. It’s actually one of my top five favorite meals of all time, so simple and delicious.
