No-Bake Bars

Day 7. The trip is officially over. We’ll be waking in Honduras for the last time this morning. One last breakfast at the hotel. One last time leaving in the vans. Last hugs to our family here until next year.

It will be a long day of travel that somehow feels even longer than the days full of work we’ve had all week leading up to this day.

Hi, I’m Megan from What Megan’s Making and I’m so excited to be guest posting over here on Bran Appetit! I had the opportunity to meet Brandi at BlogHer Food a few months ago and it was so fun to meet in person!  As you would guess, she is just as sweet as she seems on her blog.

I’m sharing a really simple recipe with you today.  I remember eating no-bake cookies growing up, and I still love them just as much as I did when I was a kid. They are so soft and fudgy and full of wonderful chocolate peanut butter flavor. Best of all, they are ridiculously easy to make. Just recently I started making them in bar form, which not only takes less time, but also results in a thicker fudgier cookie.

I made these cookies late one night when I remembered I had promised to bring treats into work the following day. I had no time to go to the grocery store, but thankfully these no-bake bars use common ingredients. I was able to throw them together in 10 minutes and they were a big hit with my coworkers. Next time you’re pressed for time, or just need something chocolatey, give these no-bake bars a try!

No-Bake Bars

1/2 cup (1 stick) butter
1/4 cup Cocoa Powder
2 cups Sugar
½ cup Milk
3 cups Oats (Old Fashioned or Quick)
½ cups Creamy Peanut Butter
1 teaspoon Vanilla Extract

Line an 8×8 pan with waxed paper and set aside.  In a large sauce pan, bring butter, cocoa, sugar, and milk to a hard boil, stirring frequently. Boil for a minute and a half, stirring constantly. Remove from heat and add oats, peanut butter, and vanilla. Mix well. Immediately transfer the mixture to the prepared pan, spreading  to an even thickness. Allow to cool completely before cutting.

  5. I LOVED when my mom would make these. My brother and I would make ourselves absolutely sick by taking turns sneaking them out of the refrigerator when our mom wasn’t looking. Aaaahhhhh good times… ha ha

  8. I love no bake cookies! I usually have a batch in my freezer to put in my sons lunch for school. What a great idea to make them into bars! I always try to sneak the thick ones, and keep them for myself!

  12. Omg these were my favorite cookies growing up! I never thought of making them into bars instead. Great idea! Whenever I sign-up to do a cookie exchange I always bring “chocolate oatmeal no-bakes,” but bars would be so much easier!
