Napa Valley Chicken Sandwich

Day 3 of our trip is beginning! Another early morning after another late night, I’m sure.

And today’s post comes from a new friend, not only in the blogging world, but in real life! I met Tina at BlogHer Food this year and was lucky enough to share a room with her for a few nights. She is Fabulous – funny, sweet, and just fun to be around.


Hey there Branappetit readers! How’s everyone doing today?! Let me introduce myself, I’m Tina from My Life as a Mrs. When Brandi asked me to do a guest post over here, I was super excited! Brandi and I met at BlogHer Food in Atlanta a few months ago. We started emailing a few months before hand and she was kind enough to offer to be roomies while we were there! I guess you can say we were both pretty brave rooming with someone we’d never met. She could have been crazy… I could have been crazy… well, thankfully for both of us that wasn’t the case! haha Anyhow, we hit it off immediately in Atlanta! Brandi is THE sweetest, but that’s not news to you all! :)

So as I was thinking up what I wanted to guest post, I decided I’d give you all a little grilling recipe (before grilling season has come and gone)! Is it just me or are these summer months a flyin’!??!  Anyhow, this Napa Valley Chicken Sandwich is one of my ABSOLUTE favorites and I HAD to share it! Perfectly grilled chicken topped with sweet honey mustard, creamy goat cheese, peppery arugula, red onion and cool tomato… Does. it. get. any. better?? I think not.

This sandwich is so simple and SO delicious. It was inspired by the hubs’ favorite burger at a local restaurant here in Jupiter. However, I’m more of a chicken girl myself, so I did my own take on the “burger” using chicken. Holy smokes! So much better than the original (I even converted hubby!) hah.

The key to this sandwich though is the honey mustard! It’s made from scratch and it takes the sandwich over-the-top. Now don’t go running away on me!Homemade honey mustard is actually easy peasy! 3 ingredients, that’s it. Whisk and serve. It will change your life. Trust me. :)

Napa Valley Chicken Sandwich

Ingredients:

 

For the Honey Mustard:
1 1/2 cups of Mayonaisse
1/4 cup of Grey Poupon Dijon Mustard (do not substitute any other type of mustard)
1/2 a cup of Honey

For the Sandwiches:
4 chicken breasts
4 hamburger buns of choice (I used a wheat bun)
4 ounces goat cheese
Arugula
1/2 red onion, sliced thinly
1-2 tomatos, sliced
Salt & Pepper, to taste

Directions:

For the Honey Mustard:

Mix together all ingredients until smooth. Refrigerate until ready to use.

For the Sandwiches:

In a bowl, season chicken breasts with a little salt and pepper and toss in 1/3 cup of the honey mustard. Allow to rest for 15 minutes. Preheat grill to medium-high heat. Grill chicken for about 6-8 minutes per side until cooked completely through (cook times will vary based on chicken size and grill temperatures). During the last 2 minutes of cooking, crumble 1 ounce of goat cheese on each chicken breast and close lid to allow to begin to melt. Remove from grill and allow to rest for a few minutes.

Take a hamburger bun, add a handful of arugula, and top with a grilled chicken breast. Add a few slices of red onion, some tomato, and a tablespoon or two of the honey mustard. Put the top on the burger and take a big ol’ bite. Enjoy!
