Triple Oat Breakfast Bake

In fact, I may go raid the pantry and fridge to see if I still have everything to make this.

After seeing Ashley make hundreds of different buckwheat bakes, I finally took the plunge.

And there is no coming back. I am officially obsessed.

Last Sunday morning, I made buckwheat bakes for me and Nick for breakfast. I did a twist on this recipe, but added in fresh strawberries and used oats instead of buckwheat groats. We both loved the outcome! The bake had such great texture, and I loved the flavor of the buckwheat.

But Monday morning, when I was working from home, I wanted a bake but I didn’t want to wait 30 minutes for it. I decided to try making it in the microwave like Ashley has done before. And I also tried my own twist on it, making a triple-oat threat for breakfast.

And it was good. Really good. So good that I can’t stop thinking about these for breakfast.

If you’re like me and are rushing around in the mornings sometimes (okay, all the time), you can’t beat this for a hot breakfast. We had more micro-bakes Thursday morning (told you I’m obsessed) – I mixed the dry ingredients the night before, stirred in the wet in the morning and popped them in the microwave. These take less time to make than my normal bowl of oatmeal!

So fast and easy AND healthy. You’d never know that these were completely sugar free.

Oat flour, oat bran, and whole oats give this micro-bake a slightly sweet flavor without any added sugar.

Topped with peanut butter and cinnamon-spiced apples? Not a bad way to start your morning. Not bad at all.

 

Triple Oat Breakfast Bake

Inspired by Ashley’s Ba-nilla Buckwheat Bake

Serves 1

  • 1/4 cup oat bran
  • 2 Tbsp oat flour
  • 2 Tbsp old fashioned oats
  • 1/2 Tbsp ground flaxseed
  • 1/2 tsp baking powder
  • pinch salt
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla
  • 2 Tbsp unsweetened applesauce
  • 1/4 cup almond milk
  • 1 apple, diced and heated with cinnamon
  • 1 Tbsp peanut butter

Mix together the oat bran, oat flour, oats, flaxseed, baking powder, salt, and cinnamon.

Stir in the vanilla, applesauce, and almond milk until all the dry ingredients are incorporated.

Spray a microwave safe baking dish or ramekin, and pour batter into dish.

Heat for 1 minute and 30 seconds, or until the top is set.

Let cool for 2-3 minutes.

Top with peanut butter and apple. Enjoy!

  1. I’ve been wanting to try Ashley’s bakes but wasn’t sure about the buckwheat. This is a great alternative!

    • I already have some buckwheat flour, so I tried that first, but I didn’t have any buckwheat groats and it still worked great! I think as long as you get the wet to dry ratio right, you can use anything you want!

  15. Yum! I love making breakfast bakes! Sometimes I divide the batter into a mini muffin tin! And I top the little mini muffins with sunflower butter, shredded coconut, etc. They’re like healthy little breakfast cupcakes. :)

  18. Love it! I love that there is no added sugar, but technically these are not sugar free – since it’s high in carbs, 100% of carbs convert to glucose, which raises blood sugar – but no added sugar is still great! (sorry, that’s the insulin dependent diabetic talking!)

    • Thanks Cara! I love buckwheat, too – it’s got such a great flavor! I made some cornmeal and buckwheat pancakes a few weeks ago that were awesome. they’re the one with the bacon IN them, but you could definitely leave that out.
