Double Chocolate Brownies

I haven’t talked much about this yet, but I’ve been playing around with eating gluten free lately.

Long story short, I’ve always had really weird and random stomach issues. Up until this point, I haven’t really been able to tie it to one thing, and while I’m not 100% sure that I am gluten intolerant, I’ve cut out gluten for the past few weeks and am feeling a little better.

I’ve still had a few weird things so I’m trying to pay attention to what I’m eating and what reactions I have (if any). Either way, eating gluten free has been a fun adventure over the last few weeks.

Thanks to my friends at Tropical Traditions, I got some Coconut Flour to try a few weeks ago.

And, as expected, the first thing I made with it involved chocolate.

When my sister was here a few weekends ago, we made pizzas for lunch and I baked these brownies.

And while they may be gluten free, they aren’t totally healthy. But they are delicious.

We are not fans of cakey brownies in this house. If they’re not dense and fudgy, they’re not brownies.

Thankfully, the coconut flour was a hit! These brownies baked up perfect and had a great flavor.

I can’t wait to bake something else with this coconut flour.

Double Chocolate Brownies

  • 1/2 pound butter (2 sticks)
  • 1 cup chocolate chips
  • 3 oz. unsweetened chocolate
  • 3 eggs
  • 1.5 Tbsp instant espresso
  • 1 Tbsp vanilla
  • 1 cup sugar
  • 3/4 cup coconut flour
  • 1/2 Tbsp baking powder
  • 1/2 tsp salt

Preheat oven to 350 degrees.

Melt the butter, a 1/2 cup of the chocolate chips, and the unsweetened chocolate. Let cool.

In a large bowl, mix eggs, coffee, vanilla, and sugar until combined.

Stir in chocolate.

Add in flour, baking powder, salt and stir until all the flour is incorporated.

Fold in the other 1/2 cup of chocolate chips.

Spread into a 9×13 pan.

Bake at 350 for 35-40 minutes or until a toothpick comes out clean.

  1. Coconut flour is almost my favorite gluten free flour. My favorite thing to make with it is pancakes. I have never tried making brownies with it, though.

  2. I think I may love you Brandi. All your treats look fantastic but it is a pain translating ingredients for a GF diet. If you make them Gluten free to begin with I might be making more brownies…maybe :-)

  4. oh no! Have you chatted with your doctor about your thoughts on the potential intolerance? I had tummy issues a while back, so I totally feel for you. The brownies look great! I homemade brownies for the first time for Easter!! I love the use of coconut flour – I’ve been planning to try it.

  5. Some brownies are so dense, they actually make me ill. I’m not sure if it’s the texture or amount of sweetness..but I can only handle a few bites. Anyway, these look to be the perfect amount of denseness! Still chewy, but slightly cakey as well. Yum!

    • they were a really good texture. I don’t like brownies that are light, fluffy and airy like cake – these were a good compromise :)

  6. I agree, I am 100% for dense and fudgey. I’m so sorry to hear that you haven’t been feeling the greatest. Hopefully you’ll figure out the root cause.

I’ve occasionally wondered whether I’m gluten intolerant, at least a little bit since last year when I was tested for a whole slew of autoimmune diseases 1 out of 4 celiac’s tests came back positive (but not the most sensitive or specific one so I didn’t follow through). I’ve been trying to eat less of it, but I can’t really see much correlation so it’s hard to say…

    I’ve heard that coconut flour is the way to go with gluten-free baking though! And these brownies look so densely delicious. I think I need to go pick some up!

  9. Hope you get it figured out. My husband struggles with weird stomach problems, but we haven’t figured that out either. Laura at Heavenly Homemakers LOVES coconut flour. I’ve switched over to Coconut Oil, but haven’t tried coconut flour. Here is her Coconut Flour Muffins recipe:

  10. Everyone should eat gluten free!
    I don’t have any issues, but then again I try to eat as little gluten as possible.

  11. Good for you for reducing the gluten in your diet. It’s in almost everything these days. I was on a food elimination diet for a month – no gluten or dairy – and I felt better too. I hope it works for you, I don’t eat that way anymore, and have been thinking about going back to it. You’ve inspired me.

    I wouldn’t miss it in these brownies, they look amazing!

  12. Coconut flour?! Can you make this in a food processor with shredded coconut?

    • you know, I’m not sure! Well, I’m sure it’s possible – I guess you’d just have to find the right way to do it without it turning into coconut butter :)
