Blueberry Muffin Smoothie

Besides re-reading books, searching for the perfect olives, and downing half gallons of local ice cream, my other newest obsession is making smoothies and overnight oat concoctions that taste like baked goods.

I haven’t mastered every flavor that I’ve tried yet, but I’m pretty sure I nailed this Blueberry Muffin Smoothie last week.

When the weather is warmer, I’m a big fan of smoothies. But I have never liked yogurt-based smoothies. They’re just too tart for me!

Maybe it’s because I grew up having more milkshakes than smoothies. I don’t want a super tangy drink in the morning. I like having fruit flavors, but I still want my smoothies just a little more on the sweet side rather than tart. If it makes me pucker, I probably won’t like it.

Last Thursday was actually a really pretty day, but it was just a bit chilly in the morning.

I couldn’t wait to try making this smoothie so I just double fisted my breakfast: smoothie and hot tea.

Blueberry Muffin Smoothie

Makes 1 smoothie

  • 1/2 cup oats
  • 1.5 cups milk
  • 1 tsp chia seeds
  • 1/2 tsp vanilla
  • pinch salt
  • 1 cup frozen blueberries

The night before you want your smoothie, put oats, 1 cup of the milk, chia seeds, vanilla, and salt in a bowl. Mix together, cover the bowl, and place it in the fridge overnight.

In the morning, pour the oat mixture into your blender.

Add 1/2 cup more milk and frozen blueberries.

Blend until smooth.

  1. This is very interesting….never would have thought of doing this for a smoothie. And what are chia seeds?

    • Chia seeds are the little seeds best known for being in “chia pets” :) But they’re extremely healthy, full of omega 3s, are easier to digest than flax seeds, and when you mix them with a liquid, they form a gel-type consistency.

    On the olive note, what are your favorites? I adore olives but have yet to dive into the whole foods olive bar for fear of wasting a wad of cash on not so awesome ones.

    • Ooh, a favorite? Lately, I’ve been loving whole green olives (not pitted or stuffed). I also love kalamatas and, when I was younger, would eat an entire can of black olives for a snack. You could say I like olives :)

  7. What a fun breakfast idea! I’m always in search of warmer weather breakfasts, and this sounds perfect. I bet a strawberry and blackberry version would be fabulous too!!

  8. This is perfect because I have a whole box of frozen blueberries to use up before I leave for vacation next week! YAY!

  9. I love making concoctions that taste like baked goods too, I have found that when I add sunflower butter and blueberries to my overnight oats, for some reason that combo makes it taste kind of like a blueberry muffin.

  10. Yum! I wasn’t a big fan of Kath’s Dough Boy smoothie – it reminded me of something that someone with no teeth might eat :-P hehe, but this sounds really good with the frozen fruit mixed in – I’ll have to try!

  11. I am so happy it’s smoothie season and SO happy I found your blog and this smoothie idea! I might have to add a banana though…because I love bananas. Also I’m officially going to buy chia seeds. After reading like 4 recipes for smoothies with them I’m sold. :)
