Mom’s No Bake Cookies

IMG_2728

When Nick and I got married, our cake table had two things on it: the wedding cake and a plate full of my mom’s no bake cookies.

We both tasted and decided on the flavors for our main wedding cake, but Nick didn’t really want his own groom’s cake.

He wanted a plate of cookies.

We’re both equal opportunity when it comes to good cookies, but these no bakes are still one of our favorites. They don’t last long at all, but the best part about them is that they take almost no time to make!

The only thing that can be frustrating about these no bakes is that the weather can determine whether or not these will set. If it’s muggy or anywhere near storming, forget it. Make a regular batch of cookies.

But if you find yourself with some extra time on a nice day, you’ll have cookies in no time.

No bakes. Preacher Cookies. Whatever you call them, these are one of my favorite cookies ever.

And I’ve seen all kinds of other recipes that use peanut butter and coconut, and those are all good, but I have never strayed from my mom’s recipe – the all cocoa no bake cookie – the version we love the most.

Mom’s No Bake Cookies

  • 1 stick butter
  • 1/2 cup milk
  • 2 cups sugar
  • 2 cups quick-cooking oats
  • 1/2 cup unsweetened baking cocoa
  • 1 tsp vanilla
  • pinch salt

Put butter, milk, and sugar in a sauce pan over medium heat and bring to a boil.

Let the mixture boil for 3 minutes (use a timer or watch to make sure it boils for a full 3 minutes).

After 3 minutes, take the pan off the heat and stir in the oats, cocoa, vanilla, and salt.

Once mixture is combined, drop by the spoonful on wax or parchment paper.

Let the cookies sit until they have set and they easily come off the paper.

  1. I love how simple this is! I’m going to try them. My husband loves no-bake cookies. :)

  2. I love that you had plates of cookies at your wedding. I really want to have a soft-serve machine with toppings bar. :)

  3. I have made these before and you are so right!! If the weather is “off” the cookies will not set. This does not mean however that they are inedible! You’ll just have to peel the fudgie sticky goodness from the paper.

    • oh yeah – they’re still good even when they don’t set :)

We have definitely eaten our share of cookies with a spoon, scraping them off the parchment paper

  4. Oh yeah, I’ll be trying these! My favorite kind: easy! And if you forget about the stick of butter and the 2 cups of sugar, they’re healthy.

  5. These are the first nobakes I’ve seen that didn’t use PB! I love nobake cookies. They are such a great starter cookie and they taste like fudge. They can be tricky though, if it’s too humid they won’t set up. I had them all the time growing up, so so good. :D

    • agreed! these taste just like my Mammaw’s cocoa fudge that she makes during the holidays, which is my FAVORITE! I love the plain cocoa no bakes the best.

  6. These sound really good and I love how easy they are to make. I hope you have a great day. Blessings…Mary

  7. Oh goodness, I have a feeling the taste will remind me of fudge – which will be quite dangerous. Definitely in a good way though! :)

  8. fabulous! definitely saving these for my bag of tricks :) although i doubt i’ll be able to make them in the summer in my apartment… guess i’ll have to make them quick!

  9. No bkaes are my favorite cookie EVER!! I remember buying them everyday at the corner supermarket as a little girl. Excpet they were called “Cowpatties” there.

  10. Holy wow!!!! These look so good…and easy, the perfect combo!

  11. Oh my goodness I was JUST thinking of a no bake cookie that I used to make called “gobbledygooks” and they are almost exactly like these. I couldn’t for the life of me remember where the recipe was and when I look it up online I get recipes for some tomato stew or something…. NOT what I was looking for.

These are pretty close to the same recipe though, (but I don’t remember all the sugar) and I think I’m gonna make some tonight!

  12. I have never tried no-bake cookies before! And with oatmeal? How fabulous! Thanks!

  13. what a great warm weather cookie idea, no oven required!!!! these sound yummy :)

  14. these look delicious Brandi! I’ve never tried something like this before.

  15. Thanks for this recipe! We have just about no sweets in the house – and I have all these ingredients!

  16. These are different than any other no bakes I’ve ever seen. Sounds fantastic. And I’m with Nick- I’d much rather have a cookie than cake. Hope you two have a nice weekend

  17. I’ve decided to give these a try, and I’m wondering how long these cookies usually take to set, on a nice, not-too-balmy day?

    • If the weather is perfect for these cookies, they should all be set within 20 minutes, max. But that definitely depends on the weather! Hope they turn out :)
