Alton Brown’s Oatiest Oatmeal Cookies

Two weekends ago, our kitchen was a mess.

We were pulling wallpaper down, getting glue off the walls, spackling, sanding, cleaning and then repeating. There was wallpaper glue and spackle stuck to the floors and our house was full of dust from sanding the walls.

Meals were leftovers of Friday night’s dinner and cadbury mini eggs.

And there was a lot of coffee.

But in the middle of all of this, everyone wanted cookies.

So we made room in the dining room for the baking set-up station and I cleared just enough of a path to get to the oven and back for each tray of cookies.

Nick and I were watching some videos on Food Network’s website a couple of weeks ago, and we saw Alton Brown making “The Oatiest Oatmeal Cookies Ever” and I knew we had to try them!

I didn’t toast the oats and make my own flour because I already had some oat flour on hand, but everyone loved them!

I would have never thought that cookies would turn out so great only using oat flour + oats, but they were all the best things about oatmeal cookies – just better than the regular flour filled version.

I also used a mix of butterscotch chips and white chocolate chips instead of the raisins he calls for. We’re not a raisins-in-our-cookies type of people. It’s some type of chip or nothing.

So I can’t take credit for this recipe, but we all loved them! Nick’s mom has already asked for the recipe.

And now I’m just sad that they’re all gone. I may need to make another batch soon Winking smile
