Did you know that today is National Potato Chip Day? I didn’t, but I bet Janetha did ; )
One of my favorite ways to eat chips growing up was to throw a handful on my sandwich at lunch. My favorite combinations were cheetos on a plain cheese sandwich with a smear of Miracle Whip or ranch doritos on a turkey sandwich.
Thankfully, my taste buds have change a bit since those days.
Now I like chips that have great textures and good flavor. And not just any chip will do. I love a thicker cut and Nick and I both really like kettle cooked chips for their extra crunch.
One of my favorites are the Terra Chips, especially their Blue Chips.
They are an awesome bluish-purple in color, have a slightly nutty flavor and have 40 percent less fat than leading potato chips, which is definitely a plus.
Plus – bonus! – the vast majority of the potatoes used for Terra Blues are grown on the LaJoie family farm in Northern Maine. Homegrown here in the USA is always a good thing.
And if you’re ever flown JetBlue, you also know that these chips are the official snack of that airline. And I’d say that’s better than a bag of stale peanuts.
To celebrate potato chip day, I made a fun bean dip for my bright blue potato chips!
Smoky Bean Dip
- 1 15 oz. can fat free refried beans
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1 Tbsp cilantro
- 1 Tbsp scallions
- additional toppings: radishes, avocado, cheese
Heat beans on stovetop or in microwave until creamy and easy to stir.
Mix in seasonings, cilantro, and scallions.
Top with radishes, avocado, and/or cheese and dig in.
Having a dip like this to help fill me up means that I won’t eat the whole bag in one sitting ; )
