I’ve been racking my brain, trying to come up with the perfect egg recipe to submit to the KitchenPlay Build a Better Breakfast with Eggs contest, and I think I finally have it!
PS: Thanks for my new plates, Mrs. Tomko! I love them both!
Nick and I love eggs – scrambled, fried, poached…we’ll eat them just about any way you can make them.
So when The American Egg Board offered a year’s worth of eggs(!) to six lucky bloggers, just for posting their favorite way to have eggs, I had to enter!
A free year of eggs? I can’t even imagine.
I had a hard time choosing my favorite way to have eggs.
But when you put them with homemade biscuits, they’re hard to beat.
So I made homemade whole wheat yogurt biscuits this morning and then put everything together for a fun open-faced egg sandwich.
Best Breakfast Sandwich
- 1 homemade biscuit, split
- 2 Tbsp hummus, any flavor
- small handful spinach
- 1-2 eggs, cooked until set
- Split biscuit (toast if room temperature).
- Place biscuit halves on plate and spread each half with hummus.
- Put spinach on top of hummus.
- Cook egg in pan with salt and pepper until set.
- Split egg into two pieces and top biscuits with eggs.
- Enjoy for breakfast OR for lunch, like I did.
What are your favorite ways to have eggs?

Hi Brandi,
Thanks so much for this fun twist on eggs for breakfast. Actually, I’ve always loved a biscuit and egg sandwich, but what sets your dish apart is the whole wheat yogurt biscuits and the hummus. What a great idea!
Thanks for playing and good luck!
Best,
Casey

This looks incredible!
I’m LOVING an over easy egg served over toast with a slice of melty muenster cheese and hot sauce. I eat it like every day lately!
What a great way to enjoy eggs! I have to agree with Kacy – muenster & hot sauce are fabulous additions! :)
Brandi, this egg sandwich looks so delicious! I know my husband and I both would love this. Thanks for sharing this recipe! You have a beautiful blog and I’m so glad to have found it. I’m looking forward to exploring your recipes and seeing more! :) – Georgia

Whoa, that’s awesome!!! I eat so many eggs that I have to buy 30 every so days. Good luck on winning!
How yummy. An egg sandwich is always delicious in my opinion.
I love making eggs for lunch or dinner but I can never seem to get into them for breakfast.
A hummus egg biscuit sandwich sounds amazing! Love the idea!
Back when I ate a lot of eggs, I loved over-easy. I feel like the harder they are to pull off, the better they tasted!
I am always looking for new egg recipes–eggs are definitely in my top 5 favorite foods!
