Cuckoo for Coconut Vinegar (Giveaway!)

A few weeks ago, I received some Coconut Water Vinegar from Tropical Traditions to sample.

After trying and loving their Coconut Oil, I had a feeling I would like this vinegar but I had no idea what to do with it at first!

To be honest, I had never even heard of coconut water vinegar, but I love using all kinds of other vinegars so I knew I could find some fun ways to use it.

While this is just like any other vinegar and has the usual tangy smell and taste, there is a little bit of coconut flavor that comes through – and it makes for some delicious marinades and dressings.

The first thing I made with the vinegar was a marinade for tofu that I used in a peanut noodle dish for dinner one night.

For the tofu, I mixed together 1/3 cup soy sauce, 2 tsp sesame oil, 2 tsp coconut water vinegar, 1/3 cup peanut butter, 1 Tbsp garlic, 1 Tbsp ginger, pinch of salt and crushed red pepper. I let the tofu sit in the marinade for 20 minutes before crisping it up in the pan. It was awesome!

After the marinade, I’ve been making quick and easy salad dressings with the vinegar. I love the extra depth of flavor it gives.

Olive oil, coconut water vinegar, and a bit of lime juice makes for a great tropical tasting dressing, and adding a little brown sugar really puts it over the top. Add some mint and you almost have a mojito!

And Tropical Traditions is offering one of you the chance to win your own bottle of their Coconut Water Vinegar!

What a cool product! I usually use vinegars on top of salads. Non fancy white vinegar is one of my favorite cleaning products. Hope you’re doing well this morning :)

I think it would be great in a homemade barbecue sauce to put on shrimp or fish. Serve that and some fluffy brown rice with grilled veggies and I would be a happy girl :)

I would definitely do a similar marinade with the coconut water marindade to make Coconut Cashew Ginger tofu. I’d follow Dreena Burton’s recipe of Cashew Ginger tofu, but add the coconut vinegar and some coconut butter or finely shredded coconut.

I dont even think I have vinegar at home.

Hmmmm…..1 new recipe, eh? I think I’d make a marinade with some of this vinegar, some mango chunks, and some jerk seasonings. I’d marinade chicken breasts with it and have DH grill them.

I love using vinegar in dressings – it always adds a great tang!

P.S. Your marinade looks eerily similar to one that I made for a dish that I’m entering in that peanut butter contest – haha!

I have never ever HEARD of coconut vinegar! My favorite thing to do is dip hot, crusty bread in a good balsamic vinegar. Right now we have a pear cinnamon balsamic in our kitchen.

I practically drench my salads in apple cider vinegar. I am allergic to brewer’s yeast, so I can’t have most vinegars. I can, however, have coconut vinegar, and I’ve been dying to try it. It would pair amazingly well with the coconut aminos I also use on my salads!
