Monday is for Mexican

So…I made lunch and totally forgot that my dinner will have Mexican flavors, too!

Oh well – I’ll enjoy both meals :)

I was surprised to find some local zucchini this weekend at the farmer’s market, and I made sure to buy a few. I figured they’ll be some of the last until next summer and this is one of my favorite ways to enjoy them.

Mexi-Eggs and Grains!

Today’s bowl:

  • 1/3 cup oatbran cooked with salt and 1 cup water

Topped with:

  • refried beans
  • 1 zucchini, sauteed with garlic, salt, and ancho chile powder
  • 2 eggs, over easy

This week is going to be busy!

I’ve got work every day as usual, plus more house hunting on Wednesday with Nick and some other family, meetings with lenders, AND a fun concert Friday night!

Here’s hoping I can get everything done this week – it’s going to be a little crazy.

  1. I always eat Mexican twice in one day. I don’t know how it happens because I don’t eat it that often!

    This week I have a fun karaoke party with friends on Thursday and I’m going to my cousin’s wedding in Minneapolis on Friday. I love weddings! :)

  9. I love Mexican more than any other food. I made sure to put it at least on my meal plan once for the week and sometimes it will show up even more. I’ve definitely had days with Mexican inspired breakfast, lunch, and dinner. ;)

  10. I often make mexican flavored eggs on days I’m going to make mexican food. I have no idea why. Perhaps its on my mind.
