New Cookie on the Block

Every cookie recipe I’ve tried lately has been “my favorite cookie recipe yet”.

 

I’m okay with that since it means we’ve been eating good cookies.

 

But there’s a new cookie on the block.IMG_0268

Because this batch I made last night are my new favorites cookies! :)

The best part?

They’re vegan and whole wheat. Crispy on the edges and soft in the middle, just how cookies should be. Just better for you!

Take that, 3-stick-of-butter-apple pie bars.

Also…these had to be vegan because I ran out of butter while making those apple pie bars. But either way – these cookies are delicious.

Dark Chocolate and Nut Butter Cookies

Makes 18-22 cookies

Inspired by Nut-Chocolate Chunk Cookies from Food & Wine

  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 5 Tbsp Earth Balance
  • 2/3 cup brown sugar
  • 1 “flax egg” – 1 Tbsp ground flax mixed with 3 Tbsp water
  • 1 tsp vanilla
  • 1/2 cup almond butter
  • 1 Tbsp peanut butter
  • 1 cup dark chocolate chunks
  1. Preheat oven to 350.
  2. In large bowl, cream the Earth Balance and brown sugar.
  3. Mix the vanilla and flax egg into the sugar mixture.
  4. Beat nut butter into sugar mixture.
  5. Add dry ingredients, a little at a time, until combined.
  6. Stir in chocolate chunks.
  7. Drop by tablespoon-full onto baking sheet, 1-2” apart.
  8. Bake 18-20 minutes.
  9. Cool on baking rack.

  3. I’m digging your cookies! I love cookies with whole wheat. Those chunks of chocolate are great and it’s vegan to boot! I made pumpkin-molasses the other night. I would say that is my favorite right now. It could have used some chocolate though.

  4. Never tried the “flax egg” thing but I have some ground flax seed so I’ll give these a try and let you know how I do.

  6. That sounds like my problem- everything I bake is my new “favorite ever”. Why can’t it work like that for vegetables?!

    But truth be told…I’ve never met a cookie I didn’t like. :)

  7. I just made some Oatmeal Cranberry cookies. Okay, so they were slice and bake but still, I turned on the oven! :)

    I gave up on cookies last year, they always come out super flat! Any advice? =)

    • Well, it can be from a lot of things! You may need to add a bit more flour. When I first moved here, my cookies were ALWAYS flat and I didn’t take the altitude into consideration since I’m still in the same state. But adding just 1/4 -1/2 cup more flour helps so much.
