A New Favorite

This is the best breakfast I’ve had in a while!

After drooling all over my keyboard at Ashley’s post yesterday, I made one of the best egg sandwiches yet!

And I have to say: the pour, poke, and spread method will be my go-to when making egg sandwiches from now on! It was so easy and really did make the perfect eggs for my sandwich.

My toppings today included: 2 eggs, 1 slice of Virginia bacon, sliced avocado, a little olive oil mayo + TJ’s garlic dijon mustard.

Plus 1/2 an orange.

This breakfast was good I almost made it again for lunch…but, I had leftovers in the fridge that needed to be eaten, so I went that route instead.

Filling, healthy, balanced + easy! Couldn’t get any better :)

I heated up the last of the barley/bean/chard/tomato mix I made on Monday and had that along a big salad.

Tons of green today! Green leaf lettuce, scallions, broccoli, avocado, carrots and some homemade dressing (olive oil, balsamic, dijon, salt and pepper).

Fall is here!!!

The leaves are definitely changing :) I took this last night after work.

 

And PS: My house smells like butter. You’ll find out why tomorrow!
