Bippity Boppity

So sad the weekend is over!

Saturday was great – we got a ton of stuff done, watched A LOT of football, and ate some good food.

Yesterday was about as homespun as they go ;) Ate breakfast at home, went to church, came home for leftovers, went to an open house, took Maggie to the park, made some fun food items, cleaned the house, worked on laundry, switched summer –> fall / winter clothes, and made dinner!

Whew – that makes me tired just looking at that list!

After a busy weekend at home, I feel like this Monday morning is turning me back into a pumpkin:

And, since I had some pumpkin in the fridge…

Pumpkin Oats made sense for this overcast Monday morning.

  • 1/2 cup oats
  • 1 cup water
  • 1/2 banana, sliced
  • pinch salt
  • cinnamon
  • 1/2 cup pumpkin
  • 1 Tbsp peanut butter
  • sprinkle of dark chocolate chips

Plus a fun pumpkin drink, but those details will have to wait!

  3. I baked for the very first time with yeast and the Cinnamon Swirl Loaf turned out better than I could have imagined. I may never buy another package of it again!

  8. I made those crunchy peanut butter cookies this weekend. I thought they were just okay, however, last night for dinner I topped one with a little mashed banana, coconut butter, and whipped cream. Yum! Tasted just like coconut creme pie!

  9. Mmm, pumpkin. Looks like you’re off to a good start on monday! I did alot of relaxing after a rough week, cooking dinner friday night helped :)

  10. brandi – THOSE PEANUT BUTTER COOKIES! i could not believe they had no flour in them. faboosh. and your posts also reminded me that (a) i need to buy butterscotch chips and (b) i need to rewatch disney movies. they make oh so happy. love ya!!!
