Two of my new favorite breakfasts?

Oatmeal with diced apple, a ton of cinnamon, pumpkin butter, and butterscotch chips!!!

I haven’t had butterscotch chips in the house in months and am so happy to have them back. The bag is already half gone (I mixed up some trail mix for Nick), but they will be in full rotation for breakfasts. The butterscotch chips are delicious on oatmeal – especially with peanut butter and pumpkin butter.

I’m eating this bowl of oatmeal right now, along with a cup of coffee and a side of pouring rain.

It is nasty outside! It will be hard to work and not just cuddle down with Maggie ;)

  1. Not a lot of people are fans of butterscotch flavor–but I have always loved it! Especially DQ’s butterscotch dipped cones. Yum! :-)

  3. I am loving hot oatmeal right now. I was eating a lot of overnight oats but it’s something about those hot oats in my freezing cold office every morning that I love. :)

  5. Oh butterscotch chips! I heart them. As soon as a bag is opened for one reason or another, it’s only a matter of time that it’ll disappear- they find their way into breakfast and after dinner snacks quite easily…

    I wonder how butterscotch chips taste like, I never had any. And I probably won’t, I can’t probably buy them over here.

  7. I love your oatmeal combos–especially with the butterscotch chips! I need to switch up my usual: 2 local eggs + local whole grain bread. I’m in a rut I think. But nothing some pumpkin oats can’t fix!

  8. Oatmeal is always my go-to, but recently I’ve been enjoying french toast with pumpkin. So goood.

  10. I do have a new breakfast favorite! I’ve been making a pumpkin protein breakfast cake: blend together 1/2 cup pumpkin puree, 1/4 cup eggbeaters (or 1 egg should work too), 1/2 scoop vanilla protein powder, truvia or other sweetener, and a good shake of cinnamon or pie spice. Pour into a microwave-safe bowl and cook on high for 2 minutes. Drizzle with 1 tbsp melted White Chocolate Wonderful pb. Heaven!

  11. I just bought a bag of butterscotch chips too! I make a bowl of banana oats, then stir a few around so they are combined, then I top the oats with more butterscotch chips!
    Its also good if you add some chocolate chips too!
    (Clearly I have a huge sweet tooth when it comes to breakfast!)

  12. My favorite breakfast is my homemade conserves in yogurt with oatmeal. It tastes like apple pie :-)
