Cookies + Coffee

I have to share two things with you.

1. Make these cookies.

But do not make them if you’re really hungry, in the house by yourself, or just really in the mood for a good cookie. Because I ate 6 the night I made them. Six cookies! Woke up with a little tummy ache and ate 5 more later that day. Then 3 Monday. At least the number per day was going down, right? They are delicious.

I did make a few changes: using all white whole wheat flour, a flax egg instead of egg replacer, and walnuts in place of pecans.

2. If you like steak and coffee, make this.

I’ve heard of coffee rubs on steak but had never tried it. Since we now have a ton of Honduran coffee, I decided to use some of our espresso in this mix.

Spiced Espresso Rub

  • 2 Tbsp ground espresso (or coffee of choice)
  • 1 Tbsp ancho chile powder
  • 1.5 tsp ground cumin
  • 1.5 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cinnamon

Mix together, coat steak, and grill.

We used the rub on some local sirloin Saturday night. The coffee flavor was very subtle! I thought it would be stronger, but it was perfect with the spices in the mix.

  1. Bratwurst Pizza!!! (whole wheat pizza dough, beer-sauteed bratwurst, diced granny smith apples, caramelized onions, mustard-tomato sauce, swiss & fontina cheese)

  2. The steak rub looks amazing! Last night, I made the simplest, most delicious dinner: brown rice tortilla + 1/4 avocado + 1 tbsp. nutritional yeast + grilled eggplant + grilled portobello mushroom + spinach. The wrap didn’t hold together well, so it all crumbled together and made for the most delicious flavor combination. I highly recommend it!

  3. I started reading the ingredient list for the steak rub thinking it was the cookie ingredients… and I was thinking wow those are interesting cookies! Ha ha.

  4. That spice rub sounds awesome! I would love to try that on steaks. Especially since the flavor is subtle because my husband doesn’t like coffee.

    • After smelling it while I was mixing it up, I was surprised that the coffee flavor wasn’t stronger! We really liked it.

  5. That rub looks good. Last week we had greek turkey burgers with hummus, greek yogurt, romaine, bean sprouts and Israeli cous cous stuffed into a pita. It was great and my 4 kids even liked it.

    I made the Snickers Shake last night but used Silk light chocolate milk. It was awesome.

  9. Yum. I love coffee on steaks, it adds a nice almost smokey, woody, earthy flavor that goes so well with meat. I have to admit I haven’t been cooking as much lately because I haven’t been in town much, but I’ve bookmarked a corn and ham chowder that looks amazing to try.

    I made some brownies “for hubby” yesterday but keep cutting a “tiny” piece for myself. I think I have had about 8 “tiny” pieces…

  15. Whenever I make dangerous baked goods I always make sure to have someone nearby that I can unload them on. That or I freeze them right away. Otherwise I’d be like you and give myself a tummy ache :P
